I don’t know if it’s still being done, but the Cave would be open Saturday evenings in December for “Caroling in the Cave”. My kids and I went one time a long time ago. The outside pathway to the beginning of the Historical Tour would be lighted by buckets with lit candles(lumieres, I think they’re called?)It added to the magic of the event.

A delicious looking meal Rik, cook up a few extra veggies & would make a delicious Sunday dinner as well.😋 It’s amazing how times have changed, I remember when we were growing up that chicken was very much regarded as a ‘Sunday’ special treat, whether it be a whole roast chicken dinner with all the traditional trimmings, a delicious casserole or cooked on the stove top in a creamy sauce such as this. When I reported aboard my first boat I was required to perform 3 months of "mess-cooking" (or mess-cranking) in order for me to get familiarized with the crew and actually be of some use until I learned my way around. One of the secrets I learned is that, the mess-cooks always held-back a quantity of potatoes from the "fresh vegetable" supply for later in the underway after all of the fresh veggies were gone. When we made "mashed potatoes" from dried flakes, we would boil several of the real thing and roughly mash them, then add them to the reconstituted spuds to give the crew the illusion that what they were eating was fresh.
I do that with the mustards. I use Dijon with lots of dishes but didn’t like it with chicken. I had no idea why I did that. I’d tried one or the other then I mixed them it just seemed better. Never realised it’s that sour taste I was not enjoying with a chicken dish. Thanks for that. Drr🤪

Mushrooms go wet, then go dry and suck up the flavors, don't freak out :) I would eat this with frozen peas and carrots or succotash. But if you can get a big enough bunch of spinach, go for it :) In most parts here in the US store fresh spinach bundles are pathetic, unless you grow a heap yourself, I recommend frozen. This is good ole down home Mom food, thanks Rik.
Failures: Bought everything for the trifle and forgot the lady fingers (idiot) Incinerated two chicken breasts yesterday. Knew I should have fried them instead of baking them . Successes: t will let you know but I will make this tonight. Did I hear a cat in the background?😊
Trifle sponge is like any old sponge mix which is fatless and cooks v v quickly in the microwave and you can control the sugar levels. Eg 1 egg 2oz caster sugar whisked till pale and foamy, 2oz self raising flour a few drops of vanilla. Fold the flour in, slacken if necessary with a dribble of milk , put into microwavable bowl and cook for approx 3 mins depending on your machine. Once almost cooked cover with a tea towel till cool. This freezes very well. I use this recipe every year for sherry trifle - it’s never let me down. Good luck.
