  • Chanko Nabe, a.k.a. ‘Sumo Stew’ is a popular style of eating hot pot hailing from Japan. It’s the food of choice for sumo wrestlers, thus the nickname. Vegetables, seafood and meat can be cooked in seasoned broth at the dinner table as you dine together.

    Chicken stock:
    3½ litres of water
    500g chicken bones
    1 white onion (thick slices)
    1 bulb garlic (halved)
    50g ginger (sliced)
    4 spring onions
    Meatball:
    500g minced chicken
    1 egg
    4 tbsp soy sauce
    2 tbsp sesame oil
    2 tbsp cornstarch
    ¼ tsp white pepper powder
    3 spring onions (chopped)
    1 tbsp grated ginger
    Hotpot toppings (customised to preference):
    2 tbsp dashi miso paste
    500g clams
    12 prawn
    2 fillet of seabass (cut into slices)
    250g slices pork belly
    2 daikon
    2 carrots
    2 leeks
    8 shiitake mushrooms
    200g enoki
    200g maitake
    1 pkt silken tofu
    200g tang oh
    200g baby xiao bai cai

    i am happy to see a fellow japanese proving such a valuable information in such a tasteful way. the stock is the key so if people try this way shown here, everyone can enjoy this perfect meal. it’s really healthy and great tasting. oh, the video didn’t mention it but the longer you simmer stock the better. three hours ideal but shorter cooking time acceptable if you are inpatient. it’s magically good. almost medicinal. a must try.

      Cholesterol, carcinogens, pathogens, and even feces found in chicken products increase the risk of heart disease, breast and prostate cancers, urinary tract infections, and foodborne illness. Red meat as well is a class 2 carcinogen. Next is not healthy. Look it up!

      What they don't tell you about is the amount of rice that they eat with it. It's the only way they can get enough calories in to bulk up as much as they do.
      They also only work out for around 5 hours a day in the morning

      @@michaelpryor78 exactly. It's the copious amounts of rice...and beer followed by nap and helps them put on that weight.... The chanko itself is pretty healthy...a 100x better than a trio at McD.

      @@vlada Sumo aren't fat contrary to their looks they are mostly muscle, just very heavy set like a body builder but they are more strength training more so that just going for shear vanity muscle alone. This is protein packed to help build and maintain all that muscle.

    February 10, 2020: I have prepared Chanko Nabe every weekend for the last 6 weeks and include the broth with my supper every day of the week. It seems my whole system has changed: I feel healthier. Everyone around me is coming down with flu or cold, and I remain healthy. I credit the broth, which is chock full of white and green onions and garlic and ginger, and I add celery root which is highest vegetable with potassium--everything that is the best for a healthy body. Even my complexion has changed, from rather dull to smooth and bright. Again, I credit the broth, a bowl of which I have every night with my dinner. I'll be preparing Chanko Nabe I think every weekend for the rest of what is left of my life. Try it. You will LOVE it.

      I will add something: if one is feeling lazy/or does not want proceed further to cook chanko, even broth will be enough to indulge on... I am cooking simple Japanese dishes every weekend, including their famous vitamin bomb - misoshiru… people, that's love!

      @@ekaterinazelenova5015 heres a tip. Make a bunch, then freeze what you dont use. Pull out portions whenever you want to eat any of the dishes you mentioned

      In winter time i used to get cold and hungry in the night, then i eat some instant ramen almost everyday for the last couple weeks now. I know its not healhty at all. After reading ur post, i will try chanko nabe instead.

    In my family we boil water and put in whatever we want to eat. The soup is formed by what's inside. Most of the time you'll taste beef, mushroom, beef ball, vegetables, seafood and maybe some cockroach

    It really says something when the meals for the sumo wrestlers, the only overweight people in japan, are far healthier than the ones for general populace in western world.

      They aren't overweight because they're "fat." They're overweight because of the nature of their sport. Normal people can probably eat this everyday and not gain a pound!

      @@FoieGras Much of the weight they do carry around is fat though. They get it from the rice and beer they have with the chanko. It's just that underneath the fat is a lot of muscle. Most fat people accompany their unhealthy diets with a lack of exercise. Sumos don't.

    I wondered why you blanched them first, I am assuming it's so all the froth that forms when making soup is released in this stage and when you transfer them for the long cook, it keeps things clear. Guess I shall see when I make this :P

    Big fat sumo wrestlers come to mind when thinking of Chanko, but ironically, eating nothing but this everyday will make you lose weight like crazy.

      It’s always a matter of proportions, even lean grilled meat and salad can make you obese if you eat 3kg of it per sitting.

      It's not simply the stew itself, it's the fact that after eating the wrestlers all nap that helps to accumulate weight. Chanko is actually extremely healthy, and most sumo wrestlers have better BMIs than normal people, with the weight they carry being almost entirely muscle.

      @@claudiotadolti4550 Considering I follow the sport quite closely, yes, I have. Sure, there is subcutaneous fat that give the impression of them being big ol' blobby guys. But it's deceptive. You would be astonished at how much muscle they have. You might also be surprised to know that they can generally do full splits and then stretch forward until their entire torso is on the ground (a stretching exercise called matawari). They're big guys, but don't mistake them for anything other than the consummate athletes that they are.

    Will the leaves of the baby bok choi be overcooked by the time the chicken is cooked through? The broth was already boiling before the meat balls were put in.

    A quick tip: If you cook the chicken bones for 12 hours you'll pull more of the nutrients from them. 2 hours is not enough!

    I made this but the chicken was too salty. It was good, but 4 tbs soy sauce and 2 tbs sesame oil is a lot!

      I saw it too and I was like whoooooaaaaa.... that's a butt load!
      2:08 that doesn't look like 4 TABLEspoons!!!!
      next time try using just half or so , 1-1.5oz, and sesame oil is strong, try using 1/2 maybe, for our western taste buds...
      or even add about 1/2 TEAspoon of msg after removing the soy to keep the umami levels healthy.

      the 2 tbsp of sesame oil was what really threw me off. that stuff is so insanely strong I feel like thats all you'd taste in those meatballs.
