I found pretty much this exact recipe in Parents magazine about 14 years ago and cut it out. It's fantastic, everybody loves it. Always use EVOO to cook these, never anything else, I'm with you
Yum. Looks delicious. I’m definitely going to try. Thanks. Now to the extra virgin oil, I was told in Italy by an olive grower never to waste that good oil on cooking and that its low smoke point makes it carcinogenic. I still add a little bit though.

I made this today and it was delicious and moist while crispy. I didnt have any flour so used cornflour and it was still lovely. Thank you.😋

I've been cooking chicken cutlets like this since I was a little girl. Italians eat cutlets like this all the time. We just don't put any lemon on it.
