This looks great, I have to thank you for showing the noodles. I am gluten sensitive and I cannot find chicken noodle type ones near me. Spaghetti though? Easy peasy and affordable! You just revolutionized my soups 😘
Hi Refika, one suggestion for the coriander/parsley. Once one puts the leaves, one should not cook too much. I use the thumb rule, if the heat is on, add only the stems, cook for 2-5 more mins, switch off the heat and immediately add leaves and close the lid.
Merhaba Refika, we where in Türkiye for 3 weeks just recently, and ate a lot of soup. Its so tasty, so healthy, filling and cheap. My favorite is ezogelin corbasi, but I also like the jogurt soup with rice & mint (yayla corbasi I think ?) and mercimek corbasi with a sprinkle of lemon juice before you eat it. Your chicken soup recipe looks great, but as I dont eat a lot of meat, so I prefer the other 3 mentionned soups.

I make this soup a lot in wintertime, but I use rice or pearl barley as vermicelli/orzo/pasta absorb the liquid very quickly, and the soup becomes very thick and mushy next day.

FYI...I live in Northern New England USA and since I work from home...most meal prep for the family falls to me these days which means I'm "Mr. Mom". It's a bit cold and rainy here today and I have a batch of this soup going on the stove. Everyone who has stepped through the door has said "Wow...the house smells amazing! What's for dinner?" As the chef, I've done a bit of taste testing along the way and I can say for certain this one is on the short list of easy to make "winter warmer" recipes! Thank you again!! PS I only had long angel hair pasta on hand and so the tip with the kitchen towel to break it down was BRILLIANT!

This is similar to the one I make (my mother-in-law from Egypt showed me how) and, in fact, I'm planning it tomorrow. Very delicious and preventative as well as healing.
hi Refika. Thank you for simplified versions of great dishes. Now,when it comes to any soup that uses any kind of pasta,we always cook pasta separately (especially vermicelli). after the pasta is cooked,run it under cod water,leave it for a few minutes than run some olive oil so it doesn't stick. The reason why?. If you cook te pasta with ta soup ,after some time the pasta starts to get soggy,unles you eat it straight away.But what then if you have some soup left.The following day is not eatable. to serve the soup this way,you present the. hot both in one dish and the pasta in another. Than simply serve your self with the pasta(how mosh you like)than ladle the hot broth on top,which is going to reheat the pasta ant it will not be overkooked. any left meal can go in the fridge and all you need to do is reheat the broth and pour it over cold precooked pasta... this is normal in Spain and Asia. yakhni in Urdu is chicken or meat broth, it takes a longer time than soup.one could add lil more ingredients in it too for the change of the taste without changing the color of the yakhni/broth. and one could make a soup/shourba by using yakhni as a base .

As soon as autumn arrives I make a huge batch of chicken soup broth for colds and all I have to do is thaw it and add the noodles to feed the sick. Glad to see I add almost everything you do. I’ll add ginger next time.
There must be a million version’s of chicken soup. But there is only one version that I cook. My Mom’s. It is the absolute best. I make it exactly the way she did. I don’t need to alter it or improve it. It is perfect and one of my favorite things she cooked. When people ask what is one of my favorite things to eat I always say “my mom’s chicken soup”! 😊

I am so glad to see you use a pressure cooker. I always make my soup in my pressure cooker, and everyone thinks it's crazy.
Not for every soup but i also use it very often especially for lentil soup etc.
But she didn’t cook the soup in the pressure cooker, but only the chicken, because it’s faster cooked!

We call yahni for meat stew 😊 in Türkiye
Wow, interesting. I grew up in Soviet Central Asia, and my Mom used to make the tastiest "yakhniya," but with fish, not chicken.
So our languages are related. Urdu is a Turkish word. Meaning related to army. It was used to be the language of army of the moghuls in subcontinent.
Meat stew or broth is yakhni in Urdu soup is different and modern form of yakhni with extra ingredients.
