- Hello friends welcome to cooking mama channel, today we are makes Dolmeh rice.
Dolmeh Barg-e-Mow is one of the delicious and famous Middle Eastern dishes that is highly popular in our country, Iran. This tasty dish is made from a combination of rice, meat, legumes, and herbs, and is wrapped in grape leaves.
Recipe for Rice Dolmeh:
Ingredients:
- Rice: 4 cups
- Lentils: 100g
- Split peas: 100g
- Raisins: 100g
- Onions: 3
- Herbs for Dolmeh (Tarragon, Parsley, Dill, Fried Aromatic Herbs)
- Mint
- Marjoram
- Cilantro
- Dry Fenugreek Leaves
- Salt
- Black pepper
- Red pepper
- Cinnamon
- Allspice
- Turmeric
- Oil
Instructions:
1. Rinse the lentils and cook them on low heat for 30 minutes until tender.
2. Rinse the split peas and cook them on low heat for 30 minutes until tender.
3. Meanwhile, finely chop the onions and sauté them in oil with turmeric until golden brown.
4. Add mint, dry fenugreek leaves, marjoram, cilantro, and fried aromatic herbs to the sautéed onions. Stir well.
5. Add red pepper, salt, black pepper, allspice, and cinnamon to the mixture. Allow it to fully cook.
6. Add the herbs for Dolmeh and sauté until they are cooked.
7. In the meantime, collect the foam that forms on top of the split peas and mix them.
8. Add raisins to the sautéed mixture and stir until they are browned. Then add the lentils and mix well. In this step, add two tablespoons of turmeric and black pepper and mix well.
9. Add the split peas to the mixture and mix well.
10. At this point, let the water boil. Once it boils, rinse the rice and add it to the boiling water. Let it cook for 15 minutes, then drain.
11. Heat oil in a pot and place bread at the bottom for tahdig (crispy rice).
12. Add a layer of rice followed by a layer of the mixture. Use your hands to evenly distribute the mixture between the layers of rice.
13. Continue adding layers of rice and mixture until all ingredients are used.
14. Cover the pot and cook on low heat for 2 to 5 hours until fully cooked.
