MEDITERRANEAN WHOLE CHICKEN - Slow Cooker Recipe + Meals!

  • Today I'm sharing how to cook a whole chicken in the slow cooker and use the leftovers for more delicious meals! You can cook a whole chicken and have a week's worth of meals if you want! This whole chicken recipe for the crockpot or slow cooker is SO easy and takes minutes to prepare. I hope you enjoy the recipes!
    Mediterranean Whole Chicken in the Slow Cooker Recipe
    - 1/2 white onion, sliced
    - 5 sprigs fresh thyme, stemmed and chopped
    - 1 lemon, zested
    - 1 tsp salt
    - 1/2 tsp pepper
    - 3 - 4 lb chicken (thawed if previously frozen) with giblets removed
    In the bowl of a slow cooker, add the white onion, set aside. Prepare the rub for the chicken by adding the thyme, lemon zest, salt and pepper to a small bowl. Pat the chicken dry on all sides. With chicken breast side up, rub half the salt mixture all over the skin of the chicken. Place the chicken breast side down in the slow cooker on top of the onions. Rub the remaining salt mixture onto the back of the chicken. Place the lid on the slow cooker and cook on high for 4-5 hours. Ensure chicken is cooked to 165 degrees F. Meat should fall off the bone and juices should run clear. Enjoy the chicken and save the bones for stock!
    Salsa Chicken Skillet Recipe
    - 1 tbsp ghee or avocado oil
    - 1 yellow bell pepper, sliced thin
    - 1 red bell pepper, sliced thin
    - 1/2 red onion, peeled and sliced thin
    - 1/2 tsp salt
    - 1/2 tsp pepper
    - 1/2 tsp oregano
    - 2-3 cups shredded or diced cooked chicken breast
    - 1 cup salsa
    - 2 cups baby spinach
    - optional additions: 1 can black beans, rinsed and drained, juice from 1/2 a lime
    Heat a large skillet over medium high heat. Add the ghee, bell peppers, onion, salt, pepper, and oregano. Stir to coat. Cook for 7-9 minutes or until onions are translucent and peppers are tender. Add the chicken and salsa, stir. Allow chicken to warm through and cook for 3 minutes. Add the baby spinach, cook another 3 minutes or until spinach is wilted. Turn off the heat and stir in optional additions (black beans, lime juice). Serve over brown rice, white rice, cauliflower rice, or greens. Enjoy!
    Chicken Broth in the Slow Cooker Recipe
    - 1 chicken carcass
    - 1/2 white onion, sliced
    - 1 carrot, chopped
    - 2 celery ribs, chopped
    - 2 sprigs fresh thyme
    - 1 sprig fresh parsley
    - 1 bay leaf
    - 1 tsp salt (or to taste)
    - 1/2 tsp pepper
    - 1 tbsp apple cider vinegar
    - filtered water
    Add all ingredients to slow cooker (fill water almost to the top leaving about 1/2 inch). Cover and cook on low for 8-12 hours or up to 24 hours for bone broth! After done cooking, strain the broth through a fine sieve to remove herbs, bones. Refrigerate or freeze for future use.

    I've made chicken broth many times, but never in my slow cooker. I'll bet that the flavor is even better that way. I'll give it a try!

    Love the lemon zest idea. I love rosemary with lemon and orange too. Your slow cooker method is great. I usually put stuff under the skin too.

    Love your videos! Could you cover prediabetes? I was diagnosed in my 30’s. I have been eating lower carb and trying to exercise regularly. My BMI has always been around 21. My issue is high fasting morning glucose. I need some good night time snack suggestions. I noticed if I try the intermittent fasting my glucose goes even higher. I’ve found that 5 small meals a day work best for me.

    Jordan? I run a Facebook Group called "Healthy for Life." I cook for that Group, and I share your videos to it as well. People are interested in other Life Experiences, it completes the whole experience. Not everything we do in life is cut and dried. Your recipes are great, but take a few pictures, and a few small videos of what you're encountering out there also? I do, and it makes a difference. The successful Channels out there mix it up a little? For instance, I took an image of Turkey's at a Supermarket, which were only $16.99, when others around the country are paying $90.00 for the same size, and quality?
