This design for Tam Lin was actually intended for him and then later re-purposed for Cu Chulainn so techically he's the original and Cu is the recolour. I plan to add as many recolours as I reasonably can, the original game has quite a few already. Feel free to suggest one, I might not have thought of them all yet.
How much control do you have over existing models? -Can you make parts not appear (ie remove Aciel's crown as part of Soul Hackers Jirae Muspell, or if you'd rather, remove Surt's sword to make Raidou Muspell)? -Can you attach or replace existing particle effects (ie add fire to Horus to make Phoenix)? -Can you rescale models (ie make Chatterskull big to make Gashadokuro)? Even if you can't there's still tons of demons who would work just as recolors. But some idea of the scope possible would help with brainstorming.

I do want to look into particle effects because those would really help with some demons. The scale of models can be controlled via code thankfully. Regardless though, Muspell is a demon I wouldn't want to add due to the existence of a magatama with the same name.
I'd like to suggest Edimmu of all demons PURELY because of the fact that he's such a lackluster recolor that nobody would literally ever think of him, A PISS YELLOW recolor of Jinn?! Crazy. Also because I can't remember many of the other recolors the series has had at the moment. If there's any recolor that'd make for a cool gameplay mechanic rather than just filling out the roster though it'd probably be Gold Slime (He could be like a rare encounter with rare drops for instance), he never had any actual textures done for him in any 3d game (neither did the blue crap slime) and he never appeared outside of MTII afterwards but still. Someone already suggested Raidou Muspell which is probably a solid choice even if it butts heads with a Magatama name. You could after all use an alternate name for him, I know people have renamed demons before for their hacks (Mainly talking about AFriendlyIrin's race rename mods & patches) such as Angel > Angelus to get rid of the confusion of their renaming of the Divine race over to Angel. In all fairness it's not a common occurrence but there's also the fact that the old and even current smt1-2 fan translations don't consistently use the same name for the Diamond Realm, sometimes opting for "Kongokai" or "Vadiraja(not sure if this is how it's spelt?) Divine Realm" instead.
This is a pretty cool proof of concept! I've also noticed during the demonstration that Hama now does damage as usual, so I think it works just like how it does in SMTV where the Expel effect only procs on weaknesses, on chance. I think Mudo is similar as well. Also noticed Potentials as well.
I know it would be alot of work to implement but I would love it if Yoshitsune was somehow added to Nocturne's roster, given his model is in the game thanks to Raidou. Regardless, this is awesome work to see and I hope it all goes well! Good luck and keep up the awesome work!

As much as I'd love it to be so, that's out of scope for now. We don't really know how the asset structure works well enough to add new models. Recolour demons are do-able because I can copy an existing demon's assets which means the structure is maintained.

Well, if you take Datsue-Ba... and you recolor it a small bit, you can make Toki from SMT IV Apocalypse. And it's name... is Evil Toki.
