Chicana (Mexican American) here and this looks good! I would try. ☺️ Maybe it was just my family, but when making Mexican rice, you don't wash the rice but toast it in oil. The smell of toasted rice is amazing! Then you add the tomatoes, onions and veggie broth. Add more broth or water and let it cook! My mom would put in canned corn and oh shot was that my life. As a baby she would add sour cream to my rice so now I just do the same but with vegan cream and have it as a snack. The rice also tastes amazing in miso soup!
Mindy Bruce no idea but you don't need to use a lot of oil, if you're worried about your health just use a tiny amount of olive oil, then add the rice and mix well to coat it all. the difference in flavor is huge!

i made this in about 30 minutes after scavenging the fridge for all the ingredients. It was super flavorful; I was like wow on the first bite. My favorite part to cook was the rice, i never made that way. the sauteed onions and peepers and mushrooms added the best flavor. I went plant-based about 2 months ago, so I am discovering all the new ways to make the food i love. This was excellent,

I really prefer this kind of plant based cooking to the kind of stuff you do in videos like "Kentucky Fried Chicken Burger Vegan." Just seems healthier and more wholesome! Well, I made these and cheated here and there... Instead of cutting my peppers and onions the store had already chopped them up and roasted them in a package... I used a package of organic 90 second rice and a can of roasted tomatoes, came out good... The beans on the other hand, instead of the pepper flakes I substituted for a 1/4 tsp chili powder, OOOOOPS, maybe an 1/8th next time, did not have to add any more spices to anything else on the count of that screw up! Overall came out delicious, wife happy, I can relax now.

Mushrooms + oregano + garlic + smoked paprika is one of the best combinations I’ve ever tasted but then again mushrooms are my best friends 🤷🏽♀️
