You should never let the foil touch the ribs after seasoning. It will break down the aluminum foil and seep into your meat and now you will be eating bits of metal. Use parchment paper as a barrier between your meat and foil.

Brother. I live in an apartment and have done oven baked baby backs several times and your other video on babys was by the best by a mile. Just picked up some spare ribs and was so happy to find another video of yours. Another successful oven bake session. Thank you, more people need to see both the videos if you are doing pork ribs inside.

Have an extensively used smoker. Use it for ribs among other things over two decades. I have found that the oven does better. When I want a smoked flavor, I add Liquid Smoke to a side bowl at each plate, but never to the ribs while baking. Works very well and results in a superior product. And, I do not have to worry about being outside in inclement weather.

Nice recipe, I used a large baking sheet that has a wire rack insert with the pan lined with foil. The wire rack keeps the ribs up out of all that fat and allows for warm air circulation as well. I tend to go lower and slower at 275 then later going up to 300. I love this no wrap method as the ribs just turn into a pile of mush wrapped in foil just as you alluded to. I also do a variation of these on my gas grill using a smoker box to get some real smoke flavor.

Made these recently and when I say these are TENDER!!! I was transferring them onto a separate plate and the whole damn thing ripped apart from just picking them up! I'm making them again but at 2H30Minstead of 2H45 mins and then adding the BBQ sauce for 4 minutes instead of 6. My first ones were so tender but the outside BBQ sauce got a little too crispy on some of the edges. Apart from that little adjustment I had to make since every oven burns a little different, they were the BEST ribs I have had since I smoked them for 5 hours, but in half the time and I showed all my coworkers a video I took of me just pulling them off by hand and they couldn't believe it was done in the oven! Thanks for the recipe!!

I prefer your video and method because it's very clear and concise. I have two questions as I am going to do this method to some flash frozen vacuum packed ribs I got from butcherbox. One is for the olive oil, is there a reason specifically you did this instead of mustard? Does one adhere better during baking in the oven versus a smoker or BBQ? I planned to use mustard and the oven. Also do you think there would be any reason if I cook on a Sunday it could hurt taking them out of the freezer and thawing them beginning Thursday night in the fridge? I've already made some steaks from butcher box I thawed 24 hours and they didn't cook properly inside. I believe they were still cold in the center. With the thick ribs and bones I assume this issue would be compounded. That's why I wanted to give it a couple extra days.

At the end of the 2 hours. You say to increase the temp from 350f to 450f. Should I remove the ribs from the oven while it heats to 450f then replace them at 450f for 10 min? Or leave the ribs in the oven while it heats to 450f?

He didn't mention anything about raising the temperature.
He was saying 2 hours and 45 minutes.

I'm 2 years late to the party, but I'm glad I got here. I have some clarification questions for you if you please. My rack has more ribs than yours, 13 or so. Do you suggest cutting them in half before cooking, or can i just leave them whole? They will fit at an angle on the cookie sheet in one piece. Secondly, you don't mention bumping up the temperature from 350° to 450° for the bbq sauce carmilazation until after you have finished the ribs completely. I'm not sure how you handled this. My assumption is when I take them out to sauce them I just leave them on the counter until my oven inicates it up to 450°. I can sauce those bad boys much faster than it takes my oven to get to temp. I can't see how having them sit out until it gets to temperature would cause any problems, but since you are the rib master I thought I'd check. Thank you for the toothpick tenderness check. Not all racks are equal size and now I have the knowledge to know when they are done. I'm an experienced cook, but I've been intimidated to try ribs since there are so many opinions out there. Your video is totally straight forward and easy to follow. Thank you for the membrane trick. Invaluable. Subscribed!

You should be able to cook them as a whole rack and just use the toothpick to judge tenderness. I don’t see it taking much longer than anticipated. And yes let the oven get up to 450 before putting them back in to caramelize

Man, I realize there are tons of ways to cook ribs, but I've never made a good oven rib cooking over 300.. and also never made a very tender rib when they weren't wrapped in foil. So this kinda goes against everything I've learned with cooking ribs (which is low and slow and lock in the juices). I always wrap my ribs and then uncover when I add BBQ sauce and finish on a higher heat level. They turn out tender, juicy with a crisp outside.. never had a mushy rib from wrapping them. Just tender and juicy. Then again, braising meat is the superior method IMO
