You can make scrambled eggs from soaked then drained pumpkin seeds. Then take green skins off if you don't like green color. It is a really fantastic hack. I tried adding gellan gum (what's in JUST egg) as well, that makes it hang together well. I get best results soaking them for AT LEAST 24 hours, 48 better, and using two different sizes of sieves to "scrub" off the skins, but that makes me make it less, so I'm thinking I'll be going for "green eggs" from here out :P

It's better if you remove the starch and fiber, it leaves behind just the protein and gives a better flavor/texture, and presses like the conventional stuff. The starch is also *really* useful in anything you'd use starch in! Also it's a non Newtonian fluid exactly like corn starch n water so it's super fun to play with.
Cool. I just found out I'm allergic to soy / tofu. Extreme headaches after eating tofu. Didn't think it was the tofu, but did a test. Definitely was the tofu. So now I can have this now.

11:04 Mark from Sauce Stache channel made a (not green!) pumpkin-based vegan scramble some time ago and he was really pleased with the result so maybe it is indeed worth giving a go with pomfu too :D
It’s incredible simple to make. You soak pumpkin seeds. Then blend them with water, squeeze it through a nut milk bag, and as it heats up it will separate on its own. Very nice curds.

I'm reading so many bad reviews about this product. But I eat a vegan high fat/low carb diet (carb ranges in between Paleo and keto throughout my week) and before I was found out on pumfu, I was usually just eating raw (black-)/ sprouted pumpkin seeds, or occasionally ground pumpkin seed, and I absolutely loved pumfu. The first time I tried it out I ate it with that Forager brand sour cream. Throw some pink salt on it and it was a delight ! Nothing wrong with it, taste wise, on my end. Such a great alternative to tofu.

Love Pumfu. It's so delicious. I'm not big on soy and eat this all the time. We cook it in so many ways. It's great as a scramble, and as a protein in any kind of saucy noodle dish. I agree the price would better if lower. Thanks for the review.
Thanks for the review. I was interested in trying it but it’s so much more calorically dense than medium tofu (what I usually use) I wasn’t sure how to swap it out. I love pumfu with a drizzle of balsamic glaze! Delicious! There are 3 reasons it will only be a very occasional treat: one, it is expensive. Two, it is crazy high in saturated fat. Three, it is high in calories. For 95% of my meals calling for tofu, I will stick with tofu.
Thank you for this review I am just finding this product and want to try it. Love the fact that after freezing it loses that green look. Maybe press after as you say, if it has been frozen and thawed. Thanks again.
Thanks for calling out the sunflower oil....that is an allergen for my husband. Thankfully for me, my food allergen is cantaloupe/honeydew and ripe bananas (if they're still green, I'm good).
