This is the proper Tortilla Española , my mom, from Spain always makes this and I am always happy to eat it. Our home uses smaller dices potatoes and less onion, but every home has their own style, which I love. Its amazing that you can ghave so many variety with just three ingredients, patatas, cebolla, y aceite. I also remember going to a small place near the local beach in Cantabria and getting un pincho de tortilla after swimming. Great memories.

I lived in Spain for the first 8 years of my life. This tortilla looks amazing, it looks just as good (maybe even better) as my family in Spain makes it. My favorite Spanish dish is boquerones en vinagre.
I think its important to mention that a nice trick is to leave the potatoes and onion with the raw eggs for 5 to 10 minutes in the bowl before putting the whole mix in the pan. And also to fluff it up on each side by gently pushing on the sides while its cooking. Great video guys!
my sister makes a great tortilla , she does like you mentioned by leaving iit , she says the potatoes and onions get egg attached to them and that makes a better tortilla ..

Every person I’ve ever prepared it for absolutely loved it! I offered salsa on the side and served it with buttered toast. Thank you for sharing this video!! I do it exactly the same way, except that I only add salt when the potatoes are in the egg mix in order to not let the potatoes loose water into the oil. Also, let the potatoes rest in the egg for 30 minutes, it will enhance the flavor. Saludos

A restaurant I know adds one sweet potatoe to give it a delicious sweetness. No one knows where that sweetness comes, but it is wonderful addition I find.
There’s no other way with tortillas, they’re supper heavy compared to omelettes 😅 They also break easily and you can’t bend them as you can with omelettes

In Pakistan there's a dish called " potatoes eggs" for that first cook potatoes with onion, tomato & other spices then add beaten eggs & keep mixing till cooked kind of scrambled then garnish with coriander eat it with bread ( chapaati, roti) it's my favourite too...

I'm Puertorican and we make this all the time, but put our own twist on it. I like to add sofrito, seasonings and ham or salchichas! It can also be made to use up leftovers, like amrillos! Great video!
