    Thanks for the "shout out" to Buckwheat! .... I brown the raw/green buckwheat in butter then add water and boil/simmer for 5-10 minutes, then add salt and sharp cheddar cheese and let the cheese melt all in it. Delicious. ... and if you add 2 or 3 fried eggs to it (over easy) it is even better.

    Hi I am British, my husband is Russian and I cooked buckwheat exactly to your recipe and he said it was perfect!!! So спасибо! It was the first time I have ever tried it. I ate it with butter to try it like that and then I added hot milk, some brown sugar and a little more butter to make a fantastic flavoured cereal type breakfast porridge and honestly it was THE BEST type of Porridge I have ever eaten!!! Thank you very much!!

      Mmmm.. it sounds so simple and wholesome yet easily digestible. During sacred fasting days, we have a tradition of making simple easily digestible light foods like the buckwheat cereal you mentioned . In india, we call it godshe(its basically a sweet cereal, we have it in the evenings)
      Its fascinating how you intuitively put it together yourself.
      (You reminded me of moong godshe: it's basically boiled moong + jaggery +coconut milk )

      Its not healthy to mix carbs with protein, especially milk should be avoided. Best to add uncooked olive oil with tomato sauce, garlic.

    I love adding diced onions fried in butter to my buckwheat and also small cubes of pork fat that has been fried till crisp. Top with a little ketchup. The best savory snack or side dish.

    This looks wonderful. I bought some raw buckwheat from a grocer here in Cleveland, Ohio. I planned on trying it in Vegetarian Golumpki and hope I got the right type. I'll check out your videos for a recipe.

      Hi Cora!
      I am used more with the roasted buckwheat since I was a kid, but now I prefer the raw buckwheat. I normally buy roasted buckwheat but is quite easy to roast it at home. It just depends on the quality of the buckwheat.

    For 1 measure of roasted buckwheat I boil 2 measures of water in an electric kettle, add it to the buckwheat and cover it with a lid. The buckwheat is ready in 20 minutes and the water is fully absorbed. No standing near the stove for 20 minutes, watching it get cooked.

    2:50 not elastic flour cause no gluten, cant have it both ways. I prefer buckwheat over wheat.

    I stopped cooking buckwheat a while ago. What I do is just pour hot boiling water over it add salt and cover with a lid, let it absorb the water and in about 20-30 minutes it is perfectly ready! No need to use extra electricity/gas or water to cook it. I've tried it only with roasted buckwheat so far. I use 1cup roasted buckwheat to 1 1/4 cup of hot boiling water and 1/2teaspoon of salt.

      That is also a very good idea and I think the nutrients are also very well-kept. I keep it sometimes overnight in kefir or yoghurt, however it has that floury taste

      Thank you! You can store buckwheat as any other grain. In an airtight container in a cool, dry and dark location. Use within a year of the purchase or check details on the package if mentioned otherswiese. As for cooked buckwheat, I keep it in the fridge for up to 3 days. Hope this helps.

    Buckwheat doesn't contain gluten, which is a huge bonus.

    I feel we are both experienced buckwheat consumers. Recently in the beautiful Amish grocery shop we bought strange for us dark looking buckwheat. It is covered by strong cover which is not broken even after several hours of boiling. It is left as small stones being not possible to eat. We just don't know how to cook it. Should we preheat it to brake the covers for boiling. Is it for sprouting only? Tell please if you know.

    I just got my allergy results back. I'm allergic to Wheat, Gluten, Rice etc.
    Buckwheat is the only cereal I'm not allergic to, so I just bought it.
    It's not easy to find and it is much more expensive than rice. Ugh.
    Where do you buy yours?

      Ahhh, sorry about it.
      Buckwheat is a great alternative, just to get used with it.
      The best place to find good buckwheat are the polish/Russian grocery stores or if you want raw organic buckwheat you can find it on Amazon

    I just made kasha for the first time but it became so mushy. I think because I left it on high heat to let it come to boil but I was not watching. So it was about 7 minutes on high then I turned the heat down to the lowest and cooked it for 10 minutes. Next time I'd be sure to watch the water to come to gentle boil and quickly turn the heat to lowest.

      @cooking by Natasha Okay, so I made this again the second time. Same result, mushy! I saw other video that suggest even 1:1 ratio to get cooked and separated grains. I will try that recipe. Sadly your 1:3 kasha to water doesn’t work

      Thank you! It depends if you like buckwheat or not. At the beginning, to be honest, I didn't like it too much because I was used only with roasted buckwheat but now I understand the benefits of raw buckwheat and I adjusted the recipes to make it more tasty. I use it in salads or for example in the morning I eat it with dried fruits and organic honey and I like it.

    As soon as I poured water over my uncooked toasted buckwheat, it got pretty mushy, even before cooking. Am wondering why mine turned out different than yours.

      Ohh, so sorry about that. Most probably the buckwheat you have is not the best quality. Buckwheat can as well turn mushy if is cooked on high heat. Always reduce the heat to low after it starts boiling and cover with a lid. As advice, try to find buckwheat from Russia or Poland, they are the best. Hope this helps.

    Do you always start with cold water and wait for it to boil? Today I made buckwheat for the first time (before watching your video) and it was a disaster. It's too wet. I will do next time following your instructions.

    Why is some roasted or toasted buckwheat crunchy and edible right out of the bag and others that say on the bag they are roasted or toasted are hard as a rock and must be boiled to be edible?

    I always add 2 cups of water to 1 cup of buckwheat and it comes out perfect. It is dark so I guess it must be roasted.
    I feel like 3 glasses of water would be too much and it wouldn't be all absorbed ...
