Roy G You're welcome :) I actually got more ganache than I needed ^^ So there is enough left over to make chocolate covered strawberries, truffles, or slather in the middle of another layer cake if needed.
Mindy Taylor white chocolate tecnically isnr chocolate. its cacao buter. cacao butter is what makes all of this yummieness possible so you make it the exact same way. As a matter of fact, adding a bit of white chocolate to pure chocolate makes the pure chocolate work better (and no it does not make milk chocolate like that).

+just me You can use milk instead, or even water. Ganache is an emulsion of chocolate and liquid, it doesn't have to be cream although it almost always is.

Will the whipped ganache melt over time? I'm planning on making a cake however will be traveling for about 2.5 hours in the car but I'll be having the AC on in an attempt to keep it cool, still concerned though :/

is the ratio based on the weight (gram) or based on the volume (cup/tbsp)

It might be a little thick & dense for cream puffs. I'd try the 1:2 ratio and whip the ganache like I do in the video :)

Normally it doesnt melt quickly ...for various reasons your cake should be keep in cooler place...depending on your religion now...
