      I agree. My mom used to make homemade noodles and stuff from scratch. Gotta say,it was even enjoyable if you were sick. Which is saying something. Cuz with stuff like Campbell chicken noodle soup...being sick is 100000% miserable to me. Legit,the only thing I loved being sick because of,is my mom's chicken noodle soup made from scratch. It happened ONLY when I was sick. She made the stock from boiling the chicken til the meat LITERALLY FELL OFF the bones,then shed remove the bones, and then the veggies(celery,carrots,and some really yummy herbs and onions,all coarsely chopped) were added...and shed boil THAT til the veggies were tender. And THEN shed be making the noodles and put those in the last 20 mins). So so SOOOO good.
      I miss my mamas homecookin so so much.
      Im definitely doing it for my kids when they get sick now that I have the noodles recipe(id forgotten how to make any noodles.)

      @@happybudgie7261 id love to,but its a secret family recipe. Lol. I only just barely know it because shed let me watch her make it while i sat down wrapped up in a blanket. Even then i paid attention cuz her cooking was so so good.💜💚
      She took a majority of her recipes with her when she passed...but i remember the homemade chicken noodle soup the best. It always reminded me i was loved and cared for.

      Gemma Stafford Yeah it was delicious and I didn't have to spend like eleven to twelve dollars for one third less of it at a pizzeria. I did make ravioli from scratch a two weeks before without a machine using just my hands but they came out gigantic out of the boiling water hahaha. You're so kind practically getting a tough workout rolling out the dough just for your viewers. I loved that part it made me respect you even more. Baking is not for wimps at all lol and you totally prove that. It's real work!

    I love this! My grandmother and I used to make pasta this way for her famous beef and noodles. This was popular in the United states pre 1960. She made it on the counter top with her fingers just like you did, I remember how sticky the dough was! With the help of my mom and mother-in-law we resurrected this recipe from memory. So exciting to see it here! Good tips from you, I will rest it in the fridge and roll it out thinner. Thanks again.

    When I was younger one of my favourite things to eat was grandma's homemade pasta. I actually ate it plain as I 'didn't want stupid sauce to ruin it'.
    Nowadays grandma doesn't make it as often due to arthritis. Buuut I do have fridays free of classes this semester so I might just try it out.

    Great that you bring homemade pasta to your bakers - thank you!! I make it since years myself provided I'm not in a rush. Ravioli, Tortellini and Mezze Lune I have to make myself anyway as they're not available in my country of residence. Just a few comments/hints for those who want to give it a try:
    Per 100 gr flour take 1 big egg and you're safe. I make a hole in the middle of the flour "mountain", put in the egg(s) and 1 tbsp. olive oil and whisk it with a fork thereby slowly incorporating the flour; makes less of a mess on the counter ;-). That's how I learned it from my Mom ...
    If you don't have a machine and want to make sure the dough is rolled out thin enough ... lay the sheet at the edge of the counter and blow under it ... if it flutters it's perfect!
    I also add spices to the dough (herbs, salt, pepper, sweet paprika) - at times food colouring like beetroot powder for red pasta or curcuma for yellow (but careful - not too much otherwise the pasta gets a bitter taste) ... the sky is the limit when it comes to homemade pasta!
    Viva Italia - LOL!!!!

    I Made this yesterday and it is by far the best pasta dough recipie i have tried. My dough was a bit wetter but it worked out fine. I used a quarter of the recipe for a mediumsized lasagne for 2 people. Will be making this again 👍🏻

    I'm from the north if Italy, near Bologna and here the homemade pasta it's a really important part of the tradition.
    There's a "rule" for the elder women who used to make pasta everyday that says "If you can see through, it's thin enough"
    Obliviously this is really difficult but I just wanted to share this fun fact.
    Also the tip about the cooking time is correct, specially for the stuffed pasta the rule is "when it floats it's ready"
    You did a really good job, thank you for sharing the Italian culture

    omg I just finished making home made pasta FOR MY VERY FIRST TIME EVER and following this vid's demo and one other video just for safe measures ... and i mean i just got finished from scratch to fully cooked on a plate and ate the entire thing with my family... WOW!!!! over the top delicious never knew how flavorful pasta could be. side note : the sauce i made was super easy, white cooking wine garlic powder olive oil butter salt pepper italian seasoning and parmesan mixed into the noodles. All by hand no pasta press no machine used in the process.

      For next time, you can adjust the amount of flour. Flour in different places behave in different ways, depending on how, where, when and the type of wheat grain being milled. It takes very little extra liquid or egg in this recipe, to make a dough too wet to handle. Learn how to add it so that it is just right. I hope this helps.

    I just made this. A rare follow-through for me to watch a how-to video on TH-cam and then actually go do it immediately. I will say this: There really is a lot of elbow grease required, that's no joke. I tried to roll out too much at once though, maybe if I had quartered it like the video shows it might have been easier, but it seemed to take forever to get it thin enough. That being said, it tasted FANTASTIC. I ate it just as the video shows, only with olive oil, Parmesan cheese, salt and pepper and I couldn't believe how good it was. And I NEVER eat pasta without some kind of sauce. Mine took closer to 5 mins to cook but that may be because my noodles were a little thick, I had to give up rolling after a while because my arms were exhausted. So I am still on the fence about buying a pasta machine or not because it took a lot of time and effort to roll it thin. But either way I LOVE knowing that at least it's an option if I don't have a machine. Thanks so much for this video and recipe.

    Thank you for this video. I especially appreciate the "why" and not just "how". Very informative! Do you have a video (or article) that goes in more depth about storing the homemade pasta? I would like to make large batches and either freeze it or shelf-store it for later; weeks or months if that's possible.

      Hi Laura. You can pack the pasta in portions, or stack them with wax paper in between layers and store in airtight container before freezing them. I hope this helps.

    Hello Gemma! First of all thank you so much for this recipe. I love it, you make it so simple! Can't wait to try this myself. I have some questions about drying out the pasta too. Do you know how long it will take for it to dry completely? Also, is the shelf life and storage of these homemade dried pasta the same as normal dry pasta that we buy in stores?       The time to dry the pasta will depend on the conditions you have where you are. If it is hot and humid or dry and cold. Shelf life and storage will not be the same as dry pasta from the store. For sure. ITo store fresh pasta keep it covered on a tray in the fridge for up to 3 days. It also freezes really well for up to 4 weeks.

    Hello Gemma greater recipe. Loved it am definitely trying this weekend. One suggestion to decrease elbow grease is to use a different rolling pin which doesn't have separate piece with handle. U can check the Indian rolling pinps. They r different.

    A helpful tip when rolling out the dough: Remove the handles!
    Seriously, the handles are great when rolling pastry or cookie dough, but for pasta (or even flour tortillas) the handle prevents you from putting sufficient pressure on the rolling pin. That's why Italian nonnas use rolling pins that don't have a free spinning handle. Its better if you have a rolling pin made for rolling pasta but most in the US don't have access to them unless they order a special pin online.

      @@biggerbolderbaking Glad you like it. I removed my handles twenty years ago and never put them back in. I love the control over the rolling process that no handles gives. I can get my pasta dough thin enough to see through in no time flat without them.
