How to make Chinese Noodles At Home

    In China, there are restaurants in nearly every neighborhood serving handmade noodles. You can see how they made the noodles in front of you which is the reason why they are so popular - their noodles taste amazingly fresh. There are many ways to make your own noodles- today I will show you my version. It has simple ingredients but requires a bit of patience. I know noodles are very easy to buy, but it is quite fun to make your own and enjoy the hard work. Hope my video will encourage you to try it out!

    *LIST OF INGREDIENTS FOR HAND MADE NOODLES [serve 3]*
    - 11 ounces [312 grams] of strong bread flour[11盎司高筋粉]
    - 2 eggs + water = 5.5 ounces [156 grams] [两个鸡蛋+水=5.5盎司]
    - 1/2 tsp of salt[半茶匙盐]
    *INGREDIENTS FOR HOW I LIKE TO EAT THE NOODLES [serve 1]*
    - 2.5 cups of homemade noodles[2.5杯手擀面]
    - 1 tbsp of soy sauce[1汤匙生抽]
    - 1 tsp of Chinese black vinegar[1茶匙陈醋] [Zhengjiang black vinegar:geni.us/Bqw98A]
    - 1 tsp of dark soy sauce[1茶匙老抽]
    - 1 tsp of minced ginger[1茶匙姜末]
    - 1 tsp of minced garlic[1茶匙蒜末]
    - 1-2 tsp of chili flake[1-2茶匙辣椒面]
    - some spring onion[小葱适量]
    - 2.5 tbsp of vegetable oil[2.5汤匙植物油]
    - Add 1/2 tsp of salt into the strong flour. Give it a mix. Look for bread flour in your local store. Do not use all purpose or cake flour- the texture of your noodles should be bouncy!
    - Add the egg water mixture(2 eggs + water = 5.5 ounces) into the flour too. If you are vegetarian, you can skip the egg and add about 4.5 ounces of water.
    - Use chopsticks to stir it and knead your flour into a dough, this will take about 8 minutes.
    - Cover it and let it sit for 30 minutes.
    - 30 minutes later, use the folding technique to knead it again for 5-8 minutes until you have a smooth dough. This helps push the air out.
    - Roll the dough into 1-2 mm thick sheets. Make sure it is even or it won't cook properly.
    - Apply some flour on both sides of the sheet. This prevents the noodles from sticking together.
    - Fold the sheet and cut it into 1-2 mm thick. The thicker you cut it, the harder and bouncier your noodle is going to be. You can play with it a little bit to see what you prefer. Do not push down with the hand you're holding it with or the noodles will stick together.
    - Once you cut all the sheet into noodles you can do what ever you want to it. This is how I like to eat it.
    - Put the noodles in boiling water for 2-4 minutes. After 2 minutes, you can try one and see if you want it softer.
    - Once you think it is good, take it out and get rid of the excess water. Add it in a bowl.
    - Add 1 tbsp of soy sauce, 2 tsp of Chinese black vinegar, 1 tsp of dark soy sauce, 1 tsp of minced ginger, 1 tsp of minced garlic, some spring onion, some cilantro and 1-2 tsp of chili flake depending on your taste.
    - Heat up 2.5 tbsp of oil. I'm using vegetable oil. Pour the hot oil on top of the noodles. Try to put it on those aromatic to release the flavor. Mix everything together- You are done!

    Best Instructor EVER! OMG! She gives every tip, trick, and alternative needed to be successful with her amazing recipes!!! No music, no drama. Just her calm and peaceful voice guiding you through a recipe with incredible results! I bought her wok, made some of her recipes and I cant count how many times I have heard, "YOU made this? Its AMAZING!" and then "I can never order this in a restraint AGAIN!". SERIOUSLY...the other day I had to tell a close friend, "No, I am not going to bring my wok to cook Chinese food for your husband's birthday dinner!"

      It’s very good but be aware that it can be an acquired taste. Many Americans expect Asian food to taste like Americanized Chinese food and may be disappointed. For me I love it.

    I made this today (i only had 4 oz of bread flour) so I had to reduce the recipe amounts, but it turned out to be a perfect serving size for two people. I added a little bit of AP flour while needing the dough, as it was still sticky when i mixed the ingredients. It was fun getting the dough to be as flat as possible! I tried your recipe at the end and it was DELICIOUS, though I left out the green onions, dark soy sauce, and cilantro because i didn't have them in my kitchen, but just the soy sauce, garlic, ginger, and chile powder made an EXCELLENT flavor. You only need a small amount of hot oil, btw! Thanks so much for the recipe :)

    Hi Mandy! I have made your noodles about 5 or 6 times now. They always turn out really well thanks to your excellent Video.
    I have adopted the use of mixing the ingredients with "chopsticks". That is really nifty. I like to have them with Char siu pork,
    which I make with the Char siu sauce. 🇦🇺🇦🇺🇦🇺😃😃😃

    My favorite noodles in China were the “knife cut” noodles like you see when the cook shaves them off a log of dough into the cook pot. I made myself a noodle shaving tool and found out how much practice it takes. The dough also has to be very stiff or it won’t shave well. They have to use long poles in the noodle shops to squash it on the table when kneading the dough. I really like the thin edges and thicker center , but what I notice most is how different Chinese plain flour and water noodles taste so different from Italian style “pasta”. I don’t get particularly excited by eating a bowl of “pasta” but could easily eat a bowl of Chinese noodles every day. Now I need to try freezing the dough since getting a good log for shaving makes a lot of noodles! Your method of rolling the dough out and cutting with a knife works well when there isn’t enough left to shave.

    Greetings of Peace and Light. Thanks for the upload. Chinese folks in South East Asia make the noodles extra springy/chewy by inducing thermal shock i.e. alternate plunging the noodles into hot, then cold, then hot water 3-5 times. Best regards.

    My Mom taught me how to make some quick noodles for a bowl of soup snack by making a few crepes (without sugar), rolling them up, and then cutting in from the end just like this but they are rolled up, not folded. The strips are then ready to put in a broth because they were lightly cooked in a pan just like a crepe -can even use OXO Beef in a Mug powder flavoring added to boiling water. I will also try it your way because it is more authentic.
    You are the sweetest person! Thanks for all your recipes.

    I like the way you explain every step of the recipe. Here in Romania we make the noodles in a very similar way .we make chicken soup with homemade noodles . We spread the dough and we roll it and then we cut it with a knife , we let the noodles dry and then we add it in the soup

    I have tried this recipe a few times. I loved the flavour. Thank you for sharing it. I am kind of obsessed with making noodles and love the process. Specially with the out come. I recently used all purpose flour in place of bread flour. The result was good but it lacked the cheweiness. I think I have to knead more. Thank you again.❤️

    I remember I made this many years ago when I was a child, I don't remember the exact taste but all I know is it was tasty. It was also the very first time I made noodles myself. Suddenly remembered this video so looked up again and found again.❤ Gonna make again today

    I use baking soda water (1tsp per 4 tsp of warm water) when making My Asian Noodles. I love the texture of them. Along with the eggs of course! I love your videos!

    I finally got round to making these. It worked very well indeed, thank you! Like making bread, the ingredients are simple but the technique takes time to perfect. I made a big batch and froze them for super quick meals later. I use organic flour and free-range organic eggs. By spending a bit of time connecting with making my food, I appreciate it much more. Coupled with a reduction in my food miles and plastic use, it's a win win scenario.

    This is similar to the pasta dough just a little more water, I found it easier and faster to use the pasta machine you can use the settings to roll out the thickness of the sheets and then put through the spaghetti type, this is a great video!

    I’ve been using your technique, and it works perfectly.
    I’ve even been freezing individual servings. Just place in boiling water ,stir until they thaw and cook for two more minutes. I don’t see the sense in buying noodles anymore. These are the best.
    If your having trouble with them sticking together after you cut them, rub a little corn starch on the dough before cutting them.
