අත්තම්මා මහ වලං එහෙ මෙහ කර කර කුස්සියෙ මහන්සි වෙනවට මං දැං කැමතිම නෑ. ඒකයි මම ම බුරියානි හදල දෙන්න මල්ලිට පොරොන්දුවුනේ. එච්චර කරලත් එයාගෙ කොන්දේසි තමයි මට දිරවන්නෙම නැත්තෙ. අත්තම්මගෙ රහටම නැත්නම් එයා බුරියානි කන්නෙ නෑලුනෙ.
ලංකාවෙ අපි බුරියානි හදන විදිය තරමක් වෙනස්. ස්ටාර් ඇනීස්, බේ කොල වගේ කුළුබඩු වෙනුවට අපි පාවිච්චි කරන්නෙ වසාවාසි, මාදුරු, රම්පෙ, කරපිංච වගේ කුලුබඩු වර්ග. කුකුළුමස් වලින්ම තැම්බෙන බත වෙනුවට කුකුලු මස් රස ගැන්වුනු කරියකින් තමයි බත තම්බගන්නෙ. ඒ වගේම බතට එළගිතෙල් මුසු කරගන්නෙත් එලගිතෙල් වාශ්පයෙන්ම බත රස වෙන විදියටයි. ඒ වගේම එලකිරි මුසු කරල හදන රයිටා සලාදය වෙනුවට මී කිරි එක්කර නොගත් සලාදයක් තමයි එකතු කරගන්නෙ. ඒ වගේම මිංචි කොල සම්බෝලය වෙනුවට කරපිංචා කොල පොල් එක්ක අඹරාගත්ත සම්බෝලයක් තමයි බුරියානි කද්දි එකතු කරගන්නෙ.
ඊට අමතරේ චට්නි වර්ගයකුත් කැරට් අර්තාපල් ග්‍රීන්පීස් මිශ්‍ර එලවළු වෑංජනෙකුත් බුරියානි සමග හොඳට ගැලපෙනවා. සලාද කොල ඉදුනු, අන්නාසි පෙති, ලොකු ළූණු පෙති බුරියානි තව තවත් රස කරනවා වගේම හැඩ කරනවා.
කොහොම වුනත් අන්තිමේදි අපේ මල්ලි බලාපොරොත්තු වුන අත්තම්ම හදන රස එහෙම්මම තියෙන බුරියානි බතක් හදන්න මට පුලුවන් වුනා.
ඉතින් මට තවත් කතාවක් තියෙනව ඔයාලට නොකියම බැරි. ඉන්දියන් සාගරයට මැදිවෙලා තියෙන පුංචි දූපතක් වුන මගේ රට අනාදිමත් කාලයක ඉඳන්ම ලෝකයට විවර වුන සංස්කෘතියක් එක්ක ඉදිරියට ආපු නිසාම ශ්‍රී ලාංකිකයන්ට ආවේණික දේවල් වලින් වගේම ලොව පුරාම තිබෙන විවිධ සංස්කෘතින්ගෙනුත් පෝෂණය වෙලා තියෙනවා. ඈත අතීතයේ පටන්ම නැගෙනහිර ආසියාවත් බටහිර ලෝකයත් යා කරන පුරාණ සේද මාවතේ සුවිශේෂී මං සලකුනක් වුන නිසාම ලෝකයේ විවිධත්වයේ පහස විදින්න පුලුවන් වුනු රටක් වීම භාග්‍යයක්. මේ අතරෙන් අපේ සංස්කෘතිය ඇතුලෙ අසල්වැසි ඉන්දියාව ගොඩක්ම කැපී පේන්නෙ අසල්වැසිකම නිසා පමණක්ම නෙවෙයි. ඉන්දියාව ඇතුලෙ තියෙන මහා සංසකෘතික විවිධත්වයත් ඒවාට අපේ තිබෙන හුරුපුරුදු ගතියත් නිසයි.
අනිත් හැම දේම වගේ කෑම බීම ගැනත් කියන්න තියෙන්නෙත් ඒ ටිකමයි. බුරියානි කතාවත් ඒ වගේ. හැබැයි සත් සමුදුර පහුකරගෙන ලංකාවට එද්දි ඒ කතාව ටිකක් වෙනස්. ඉන්දියාවේ බිර්යානි ශ්‍රි ලංකාවෙදි බුරියානි වෙලා. පාට සුවද රස වගේම හදන විදියත් ටිකක් වෙනස් වෙලා. හැබැයි අත්තම්මගෙන් හදන්න ඉගෙන ගත්ත අපේ බුරියානි එක මගේ පරම්පරාවට එනකොට වෙනස් නොවන්න මම හරියටම ඉගෙන ගත්තා. මල්ලිගෙ වචන තමයි ඒකට හොඳම සාක්ෂිය. රසම රස කෑමක් ලංකාවට තෑගි කරපු ඉන්දියාවටත්, අපේ විදියට හදන්න මට කියල දුන්න අත්තම්මටත් ගොඩක් ස්තුතියි.
