On the topic of moving away to start a new project area, I would also suggest that the old area doesn't need to be abandoned. You can come back to it whenever you need stuff from there, like resources from whatever farms you had going there. And if you set up some infrastructure in the nether, you can make the travel time back and forth much shorter. And if you expect to be bringing a lot of resources either way, and stuffing that all in to shulker boxes is either inconvenient or you just don't have enough shulkers, you can get a donkey and/or some llamas to help with that.
For an extreme and interesting take on moving to a new location, there's an in progress series called By the Biome, channel What's Mined is Yours. They've been making a different build in a new biome each video and the builds aren't just for looks, but always have a specific purpose. It's not a casual parking approach, but they combine different kinds of things you need in a world with a unique build style challenge. So maybe if there's one kind of farm you don't have or think you can improve on, that could be something to plan a project around.
