Every Friday, Alfonso “Poncho” Martinez mans the grill at his popup in South LA, topping gigantic tlayudas with asiento, beans, cheese, cabbage and more. The corn tlayudas themselves are made, packed and shipped from his native Oaxaca through the informal paquetería delivery service.
