- Don’t always have time to cook? That’s fine, there are always left overs! Inside Edition wanted to find out just how long leftovers are safe to eat. So we asked Peter DeLucia, the Westchester County assistant health commissioner, for his best advice on fridge staples. DeLucia tested an egg salad from a local mother's fridge, and the results were astounding. After three days, the bacteria in the food had increased by 4,000%. General rule is just to eat anything within 2 days. Especially if it's a dairy product. How adults dont know this is beyond me, I knew them back when I was a kid.

i would reccomend getting some chicken. another great thing is thanksgiving shepards pie, which includes stuffing, chiken/turkey, gravy, and some more.

Sita Vitel we try to wing it and remember the dates, if we think it’s been a few weeks then we make it again
What about food on Grocery shelves that people just put on shelf no refrigeration then employees or customer put back in area it belongs in so do we know it was safe.

Patricia if it’s been found a while after and it feels warm then it’s thrown out to the garbage, depending on what it is. Usually the label has a time as it by the law in the grocery stores, 80% it’ll be thrown out

Tyler Sheehy Just freeze anything you aren't going to use within a few days and put it in the fridge to thaw out when you want more. It's still quite good after being frozen.

Nothing gets thrown out in my house bcuz my son eats up everything like a starving man. And he never gains a pound while I cant even look at Turkey without gaining 4 pounds🤣
Also you can’t rely on the expiration date. That date is only good until it is opened. If you open it, you’ve only got a few days even if the expiration date is weeks away. There’s always exceptions though, like cheese.

I finally broke down and bought a home freeze dryer. Best thing I’ve ever bought in my entire life. A lot of my leftovers will last 25 plus years now.

Tip: Invest in a compost bin: that way you can upcycle your leftovers in a healthy and environmentally-friendly way! Plus, you don't feel that sinking sensation of guilt that comes with throwing away leftovers. And it's great for the garden!

3 days tops. I try not to make more than I intend to eat for 2 meals.
If I'm concerned about left over food, that I may have kept too long, I offer a piece of it, to may cat. She has a much better nose than I, and will quickly let me know if it's ok. If it is, she takes a bite. If not, she scratches around it, with her front paw. She is never wrong, and neither of us get sick.

I ate food on the counter for over 6-7 hours. Cookout food really don’t be going bad. And turkey for a week. Never got sick.
This just doesn't make sense. People pack food like sandwiches to work or school, and sometimes wait much longer than 2 hours before eating it, yet they don't get sick!

I always let hot foods cool down before putting them into containers. I make large batches of stuff like spaghetti sauce, stews, etc. in a big stock pot, and it takes a few hours or so to cool down. I don't trust putting super hot foods in plastic containers. In some cases it could even melt/weaken plastic containers. Been doing this for years and never had a problem yet as far as food safety goes.
