    Because of you I will be doing some sort of version of this for dinner tonight. I bought the Chyote for the first time so I will be cooking it tonight along with stuffed bell peppers. I live with meat eaters so I will add a meat substitute for them.

    I made this tonight. I used Grapeseed oil with annato powder to your taco meat and a little date sugar as well. It was very tasty. Also, in place of using all of my chayote skins I used left over warm spelt flat bread. Loved this. I was really hungry and tired as hell when I finished after work. 😊😋

      Thanks for your support 🙏🏿 I used 2 ripe burro bananas. It's slightly sweeter when ripe. I needed the sweetness. I also used about 2 cups of Oyster Mushrooms. Use more if you have more available because it shrinks a bit. I hope this helps

    Would you mind sharing where do you get the beautiful fresh oyster mushrooms you use in your videos. I haven't been able to find a good grower to order from and most of our markets have dried if they have any at all.

      Hi, I get them from a local Asian/Hispanic Farmer's market. I also get them from Wegmans or Whole Foods. They sometimes have organic Oyster mushrooms, King Oyster mushrooms, lobster mushrooms, and Chicken of the woods mushrooms. Look for Farmer's Markets local to you. You could also look in other cities.

    @Grubanny In my area, I have found Burro bananas only 1 time. Nobody else has them. Can I use baby bananas, plantains, or green bananas instead?
    Will it taste as good?

      Hi, the burro bananas were ripe. If you're vegan (not alkaline vegan), you can use ripe plantains. Not too ripe, or it would be mushy.
