Homemade Hot Dogs From Start To Finish!

  • We are making homemade hot dogs from start to finish! We use 50/50 pork and beef mix. We season the meat and chill it for a few hours and then run it through the meat grinder and then through a food processer. Stuff non-eatable cellulose casings and make our hot dog links. Smoke them for approx 4 hours between 175° and 185° until an internal temperature of 153°. Pull them off and into an ice water bath. for about 10 to 15 minutes. Remove the casing, vacuum seal them, and place them in the freezer. Now, I have hot dogs to grill and cook.
    Seasonings I used for 6.5lbs of meat:
    38g Kosher Salt
    6.5g Pink Salt Cure#1 (Be sure to use Curing salt by the directions on the package)
    3g Granulated Garlic
    1.5g Granulated Onion
    3g Ground Mustard
    4g White Pepper
    5g Paprika

    Try putting a stick of butter down the throat of the grinder FIRST, and see the difference!! It quiets it down too!! Butter and meat go together!

      I have a LEM #8 meat grinder, and the stuffer is a 7lb capacity two-speed side crank type. The upper crank cog is the low speed for stuffing, and the bottom crank cog is the high speed for bringing the plunger back to the top quicker. I purchased the stuffer from Vevor.     I'm looking into doing my own hotdog cart. I wanted to move to more non-proccessed foods and make everything myself. These hotdogs look so good. After you freeze them how do you reheat them? Grill? Can you boil them?

    My favorite food...
    I have a couple questions, why curing salt? Wat type of wood did you use in smoker? Can't wait to try them ,all hotdogs suk these days can't find good ones like in the old days👍😋

      The curing salt helps keep the meat safe from bacteria while preparing and doing a low and slow smoke. Now, curing salt can cause trouble if you don't use it correctly. So you NEED to follow the directions of the curing salt and do research (you can google Cure#1) on how and when to use curing salt. The wood pellets I used are Pecan and Apple wood pellets. I purchase both and then mix them together before putting them in the hopper. I hope this helped and Thank you so much for stopping by and watching!👍

    I have read that the non edible cellulose casings you used will not allow smoke to penetrate in a smoker? Is this true or did you get a smoke flavor on you're hot dogs?

      @@godschild5587 It may be because I can't answer your question. This is how I've made them, and I have never made them without using a cure and I've never used other cooking devices. This is the only way I've made them. But, if you use your oven I would guess you would use the same procedure. Using the cure is up to you. You might want to refer to the National Center for Home Food Preservation nchfp.uga.edu/#gsc.tab=0 or check out others on TH-cam who also make homemade hotdogs. I hope this helps. Have a great day!

    How does the smoke flavor get throough the casing?

      The smoke won't penetrate these casings. I guess I should have worded it "using the smoker to slow cook the hot dogs. You can use hog casings or sheep casing to make your hot dogs if you want smoke penetration. Thank you for watching.

    Charlie I been grinding and doing my own venison and beef summer sausage hotdogs bologna salami bratwurst for years.the last batch of summer sausage I done.my nice big electric commercial smoker finally went out!I bought it an auction about 15 years ago 4500$ smoker nope I didn’t give no we’re that price!but there out of business and no parts! I’m looking for an alternative and noticed you used a pit boss of course I like something that starts around 100 degrees F I usually start everything at 130F for drying then increase for smoke.how does the pit boss hold up?I been use to doing large batches and like to hang but not always necessary.I only use the electric for sausage smoking my big smokers wood smokers I can’t keep running temps at low or cold smoke.thanks

      I've had my Pit Boss series 4 vertical pellet smoker for about 4 years. I have not had one minute of problems with it. Any problems I did have were user errors. I know some people say " I like to use real wood", well the pellets are real wood. I use Lumber Jack Pecan and Apple then I mix them together. I love the combination.
      My pellet with the temp set to "smoke" runs about 125°. Then the next steps up are 150° 175° 200° 225° 250° 275° 300° 350° 400° then the next and last temp just says "high". But, I do all my smoking on low temps and it has done a wonderful job. They come with a five-year warranty and customer service is awesome. Now, I'm not affiliated in any way with Pit Boss. I just purchased the smoker and I love it. It has held up with no complaints except for human error on my part. On low temps, you use a lot fewer pellets than on high temps.
      The one I'm using is the older model and it has the control panel at the bottom of the door and it will catch drippings if you don't watch it. On the new models, they put the control panel on the side at the back of the smoker making it much better and it has a digital dial and readout. My smoker has 5 racks and I can smoke 10 sides of ribs. The new one (my son purchased one) has 4 racks.

      What are you going to do with your old electric smoker? Electric smokers are pretty easy to repair even if you can't get original parts. There's not much to them and universal parts are cheap. It's the cabinet that is expensive.

      @@USA__2023 I don't have an electric smoker. I just have my Pit Boss vertical Pellet smoker which needs electricity to work but only to feed the pellets and run the fan and keep temp set.

      I use a LEM #8 dual-grind meat grinder.

      Yes. I used a vertical pellet smoker. I just laid them on the racks. You can hang them too if you want.

      @@PitSmoke thanks for the reply. How many hotdogs can I fit on a horizontal pellet smoker such as the Pit Boss Lexington 500? I want to fit at least 50 to 100 hotdogs

      @@sto2779 I'm not sure. You will just have to experiment. When I hang or lay the links in the smoker I like to make sure they are not touching. I think you could fit 50 to 100. Give it a try.

      @@Uncle_Buzz I was hoping for a smoke flavor but it didn't happen. But, I would have used the smoker anyway. It makes it so much easier.

    You know, I didn't see one pair of lips, or a single butthole go into these either! Two questions I was asking myself when you started,...#1. Will these be raw hot dogs which are very hard to find these days, you answered that with using the smoker which is perfect. #2 Will the casing or skin stay on after all is said and done. I thought for sure you would leave them on, but no, you removed them,...I like that! The Flint Coney Hot Dog is with the skin to give it that snap. I have been busy as heck, and been dying to watch this one. You didn't disappoint!

      Yep, I did away with those lol...I used non-eatable cellulose casings on these dogs. Once I finished cooking them I pulled off the casings and placed about 6 to 7 per package and vacuum sealed them and put them in the freezer. When slow cooking (smoking) homemade sausages or hot dogs, (and you may already know this) I use pink salt cure#1 and I use no more than what it calls for per pound. This is to keep the meat safe from bacteria while processing and slow cooking. If I am going to freeze them "raw" then I don't use the pink salt cure#1 sinse I will be cooking on the grill as I get them from the freeaer. Using hog casings gives sausages a nice snap when biting into them. I didn't mean write a book...lol. Thank you for stopping by and watching and have a great week!👍

    How do you heat the food in plastic....isn't there like a risk of cancer?

      These are cellulose casings made for making hot dogs and sausages. These casings are non eatable and are removed from the hot dogs. If you ever purchased hot dogs at the store they are made the same way. After I remove the hotdogs from the smoker, I remove the cellulose casing and vacuum seal them, and put them in the freezer. Now I have hot dogs just like you purchase from the store. Most big meat processing plants use cellulose casings. Have a great day!
