As a sailing channel I must admit I have not researched the best knot for the use case you described. It will lock tight and hold strong, with that said I would check I. To see what the climbers recommend and go with that before to start hanging from a great height with it 👍

I always use the bowline when I tying my line to the anchor but I guess that's the more appropriate knot
The bowline has a breaking load of 65 to 75% of the strength of the rope.
The Anchor hitch when tested is around 10% stronger.

I believe climbers commonly use a scaffold knot, or a poachers knot in some situations
