I used to work at a beef processing facility with these same machines, but I was on the sanitation/cleaning crew and never saw how the machines actually functioned. Really interesting seeing how the parts actually work.

2:26 vs 2:34 were these burgers at the initial point in the video some rejects that went to the bin instead of being papered and packaged because they did not meet the standard of dimensions or something? Of course they would be perfectly tasty but I'm wondering if they didn't meet some standards for dimensionality. And thank you, this is a beautiful video. Such high quality meat processed into gorgeous burgers.

Very fatty (holey) and greasy burger patties. Like that's more grease than Beacon's chilli cheese aplenty burger (look it up) Should be 80% lean and 20% fat.
Not everything has to have regular and Caramelized onions.
Barely any butter on the buns.
No dill pickles (cardinal sin)
Saving grace is Mac and cheese and cheese slice portions
