  • MINI KETO SNICKERDOODLE COOKIE CEREAL - THE LATEST TIKTOK BREAKFAST HACK
    In case you don’t watch TikTok, I’ll fill you in on the latest food trend...it’s making cereals out of tiny breakfast foods - like cookies or pancakes. In this video, I show you how to make keto cereal out of gluten-free, sugar-free, egg-free, keto snickerdoodle cookies! It makes a fun keto breakfast!
    These keto snickerdoodle cookies are buttery and have a hint of cinnamon and slight tangy flavor characteristic of a snickerdoodle cookie. If you wanted to make larger snickerdoodle cookies and not turn this into a cookie cereal, you can use this keto cookie recipe as well.
    This recipe keto mini keto snickerdoodle cookie cereal is easy to make and will take you less than 10 minutes to prepare. They are delicious, especially with a glass of heavy cream or nut milk poured over the top.

    MINI KETO SNICKERDOODLE COOKIE CEREAL
    1 1/2 cup almond flour
    1/4 cup coconut flour
    2 teaspoons cinnamon
    1/4 teaspoon cream of tartar
    1/4 teaspoon salt
    3/4 cup unsalted butter, softened
    1/2 cup Lakanto monk fruit or sweetener of choice
    1 teaspoon vanilla
    Preheat the oven to 350 degrees. Sift together almond flour, coconut flour, cinnamon, cream of tartar and salt in a small bowl. Set aside.
    In a medium bowl, cream together butter, monkfruit sweetener, and vanilla extract. Slowly stir in dry ingredients and mix until fully combined.
    Refrigerate dough for 30 minutes. This allows flavors to meld together and prevent the butter from spreading while baking.
    Pinch off a small ball of snickerdoodle cookie dough about the size of a large marble and roll into a ball. Place on a parchment lined baking tray and press down to form a cookie shape. Repeat with remaining dough, spacing around a ¼ inch apart.
    Bake at 350 degrees for 8 minutes or until the edges begin to brown slightly. Remove from the oven and let cool on the baking tray for 3-5 minutes before transferring to a wire rack to cool completely.
    Add cookies to a bowl and pour over your favorite keto approved milk. You can use heavy cream or any low carb nut milk - macadamia, almond, coconut.

    I was craving these expensive cookies that cost about $15 for 3 tiny bags... I decided to make these cookies instead. I skipped the salt and just eyeballed the cinnamon. It was hot on Saturday and I was making another Keto Focus recipe (banana bread my review of that is on that vid). So, I had to put the cookies back in the fridge once I placed them on the parchment covered sheets. It took longer to bake, about 10 more min. I wish I could post pics. They are BEAUTIFUL! I was so excited I broke a cookie trying to taste it too soon. Totally worth it, as it was heaven on a plate. I do not intend to eat these as cereal. I'll eat them alone or with ice cream, berries, or on Greek yogurt. They're perfect for dipping into milk, too. I love your recipes; you have some of the absolute best ones on TH-cam 😁!

    I'm definitely going to try this! I wanted you to know I made a dairy free version of keto lasagna with deli meat and am now obsessed! It is so good! I hope to see more videos and try more recipes with dairy free alternatives.

    I just made these as "regular" sized cookies. These ingredients made 12 - roughly 3" cookies. I cooked them for 12 minutes at 350. let them cool till just "warm" before eating. they were a bit crumbly at this size, i might try cooking them another min or two next time or i might try adding a little Xanthan Gum.

      Just like any other cereal, if you leave them in there for a long time, they will soak up the milk and get soggy. But it doesn’t happen instantly. It will take a while.

      The longer you leave them out at room temp...like overnight, the crunchy they will be

      The cream of tartar serves no structural component in this recipe. It’s there just to add the characteristic slight tang flavor that snickerdoodles have. You can omit it if you want.

    Made them and they fell apart,all crumbly. Eggs were definitely needed.

      You have to let the cookies cool completely before moving them or else they will fall apart. You can add an egg for extra support. I like to have recipe options that are egg free for those with allergies 😀
