Eggless LEMON CAKE Homemade with Eggless LEMON CURD I Summer Dessert Recipe

- EGGLESS LEMON CAKE
Preparation : 40 to 45 minutes approx. (Lemon curd cooling time excluded)
Baking Time : 30 to 35 Minutes (standard baking time ) @180 Degrees Celsius (Recommended : bake as per your oven)
Type: Summer Dessert
Serves: 8 medium slices to 12 small slices
This Lemon Cake make an ideal dessert for summer gatherings and occasions. The zesty, cool and tangy taste gives a fresh, vibrant feelings of summer!
INGREDIENTS:
About 4 to 5 fresh Lemons required for the zest and juice.
BATTER:
128g All Purpose Flour/ Maida
12g Corn Flour
1/2tsp (2g) Baking Powder
1/4th tsp (2g) Baking Soda
Pinch of Salt
60g Sugar
Lemon zest from 2 Lemons
2tbsp Lemon Juice
1/2tsp Vanilla Essence
150ml Buttermilk / Chaas
50ml Plain Oil
CAKE SYRUP:
Lemonade OR a mixture of Water, Lemon Juice and Sugar (as sweet as you want)
EGGLESS LEMON CURD:
Zest of 1 to 2 Lemons
5 to 6 tbsp Lemon Juice
50 to 60g Sugar
2tbsp Corn Flour
150ml Milk
1/2tsp Vanilla
1tbsp Cold Butter
Yellow color or Turmeric a pinch of is OPTIONAL
WHIPPED CREAM FROSTING:
250ml Heavy Whipping Cream Chilled
2tbsp Lemon Curd
25 to 30g Sugar
