I was wondering why the cheesecake looked kind of burnt but that is the type of cheesecake ... "Basque Burnt" style.
That’s right, “Basque Burnt.” The bakers know what they are doing and the cakes out with a burnt look exactly as they were supposed to.
Burnt Basque cheesecake is one of my favourite cakes. So creamy.

The bakery near me does Burnt Basque cheesecake and it's fluffier in appearance and very creamy, this looks a bit flat and dry in comparison.
