INGREDIENTS: Makes Approximately 5 Cups
500g Unsalted Butter - Softened
1 Can (400g) Sweetened Condensed Milk - room temp if you live in a cool climate and chilled if you live in a warm climate
2 Tablespoons Meringue Powder - absorbs moisture aids stability
3/4 Cup Melted Dark Chocolate - increased from 1/2 cup in previous recipe to increase stability - use a Chocolate you enjoy eating

What is meringue powder, can we be using Fino or Snow Powder Sugar?
@@dotsgdotmykitchenbutterand7150 powdered egg white. You can also stabilise with powdered sugar if you wish.

I'm from Florida, USA. I love the condensed milk buttercream recipes! I'm definitely going to try adding meringue powder. Will this add stability for flavors other than chocolate? Also, I add some vanilla to my frosting.
Yes, I’m general it adds stability to all of them however I wouldn’t let them sit out too long because of the dairy content.

Hi.Thank you for sharing your recipes. I love your version of condensed milk buttercream. I've made it at least a couple of times and it's always a hit. One thing I would like to know is, how long can a cake frosted with this buttercream can be kept in room temperature before it needs refrigeration? The previous ones I made went so quickly I didn't worry about refrigeration. I'm thinking of using this buttercream for my daughter's birthday.

is it stable enough for flower piping and cake decorating in warm weather? I live in Las Vegas, NV and last week I tried cream cheese frosting to use in the cake and to cover the cake. After one hour the entire cake was deformed. Will this work better?

If the buttercream is left out for longer than recommend, before returning to the refrigerator can that change flavor/texture? Especially, if using gelatin to stabilize? I also tried a different way to make cream cheese flavored buttercream using cream cheese flavored baking chips (hershey's brand). Could using the baking chips have caused the buttercream to become more waxy? The flavor and texture were different from when I first made the buttercream compared to a couple days later.
Is there any problem if there is no mariengue powder,or what can I use in the place of maringue?

I’m interested to know how you would do a pale pink icing using this recipe. I note your butter is very yellow and that’s a problem I have when trying to do pink, it always comes out a coral or apricot color
Use purple food colouring first to colour correct out the yellow. Then add the pink.
Is meringue powder the same as Pavlova Magic?

@@thebloomingcupcake Can it be used to make a Pavlova then? I make them a good amount during the summer but I'm usually tossing out the yolks which is frustrating. I hate to waste like that but freezing yolks has another step you must do which I have done a few times. Unfortunately, I've only been able to use 2 pkgs of my frozen yolks since doing them, ugh...
@@tammiemartinez6485 Don't toss out the yolks! OMG! Make curds, or french buttercream, chocolate mousse! So much you can do. I personally have never made Pavlova with meringue powder, so can't say. But PLEASE don't toss your yolks, use them.

Following the recipe, mine is still always very soft and greasy. Am I doing something wrong?
Are you using Butter or Margarine. Butter is key. Also it may help to mix the butter for as long as 5 minutes. With the Sweetened Condensed Milk, it needs to be the full strength one not the skim one. Finally, try doubling the Meringue/Egg White Powder. Ingredient quality and consistency varies form State to State and Country to Country so hopefully these tweaks will help! Good Luck!
@@CupcakeSavvysKitchen I have been using unsalted butter. I never use margarine. I'll have a look at the condensed milk and make sure I am using the sweetened one.
