Here in Connecticut almost all the leaves have fallen down from the trees and we are getting ready for a cold winter while I can imagine that Down Under you are getting ready for summer. Having a moist surface like that is perfectly normal, it's kind of glistening! Also bear in mind I've got a very bright light straight over the pie which makes it even more shiny due to the reflection on the surface...

Andy is it cooked? Because when you served it, it looked really weepy like it was weeping moisture.

Andy, should you always egg wash a pie crust. Also do you need to egg wash a tart shell like a shortcrust or only pie crust?
