How To Bread & Fry Morel Mushrooms - Cooking Wild Mushrooms

  • Hey guys in this video we cover how to cook morel mushrooms by breading and frying them. Breaded and fried morels is a popular way to eat these delicacies of the woods. It is a simple process to bread and fry morel mushrooms, much like frying anything else. In this video we cover the basics of frying these mushrooms, and some extra ways that you can serve them up and enjoy Morel season while it lasts.
    Once we have gotten or morels home we do need to do a little preparation by cutting them in half and placing them in cold salt water for a few hours to overnight. This will help to remove the bugs inside and re hydrate the mushrooms. After they have soaked to your liking get a bowl with egg and buttermilk, and another one with flour and cornmeal. You can use regular flour and buttermilk if preferred here, plus season it to taste. After mixing the two mixtures up we simply want to dip our morels in the flour mixture and then the egg, and once more into the flour mixture ensuring an even coating. At this point put the morels into hot oil and cook on each side for about 5-7 minutes, or until golden brown. When halfway done flip over and repeat on the other side.
    These can be served with cheese and marinara, on top, barbecue, dipped in maple syrup, or anything else you can think of.

    I just found my first morels ever, on my own property! We are only about 200' elevation, so i was surprised. Just started the salt water soak. It's going to be a delicious breakfast today.

    Miss them so much. Dad used to take us out 35 years ago when I was a kid in WA state. We'd find them & he taught us the proper way to harvest them & then the reward was Mom preparing them & frying them up. Mom did it all exactly as you showed! Found out we have them here in Alaska where I live now so I'm hoping to find some this season.

    Used this method but I used crushed saltines rather than corn meal and fried them in butter rather than oil. Delicious, thank you for helping make my first morel experience a good one!

    Great video. Ive been hunting and cooki ng morels since I was kneehigh to a grasshopper Sir. Nice size and nice looking mushrooms Sir. Ive been watching videos to try to find a new way to try them. Well I found it here with you!! Lol Do simple but added a great fullness and taste. " BUTTERMILK" in with the egg!! Nice.     Great recipe! You scored 5 gold stars because you breaded them twice! (That's how you get the best-fried anything). BUT, add some corn starch and white pepper to the flour and sift it - to give it more air - and you'll have that crispy coating great fried chicken restaurants have.

    Yay! My husband found some the other day and we had a wild fry of morels, dryads saddle, dandelion heads, ham n beans and homemade bread. So yummy! I personally love the dryads saddle that comes on the same time as morels. Thanks for sharing your recipe Josh!

      I mainly don't see too many of them for some reason, so getting some to try is rather difficult, lol! Maybe I just need to go hunting for specifically them and I'll find them, I've never tried that before!

    Feast or famine. When it's a Morel year you run out of ways to cook them. The next year not a one. Fortunately they dry well and after a soaking they're almost like fresh. Good stuff, Maynard!

    Close to my recipe I use Martha White's self rising corn flower and add some pepper and ground cumin. Then dip and batter and cook (IN BUTTER). and add some sea salt when done.
    I,.....dip mine in egg and my batter is in a baggie and I fry them in butter, you put the baggie in the frig for the next bunch of shrooms.
    You will be addicted.

    Everybody has there own way.
    Here is what I think is best, cut morels soak in cold water with a TB spoon of salt over night/rinse/roll in flour/shake off extra flour/cook in real butter on medium heat until golden brown. Cruchy but yet soft. Enjoy! Never use egg or milk, your killing the wild taste of the morel.

      Yep, everyone does it differently. I like a heavy batter so egg is preferable for me. Soaking overnight makes the Morels too soggy, IMO, for a heavy batter. Light batter like you suggested, overnight soaking is easier.

      @@ratslayer110 you can quick soak and rinse, I have had them like that to. It all depends on how you like your morels.
      I prefer to soak 6hrs or overnight get rid of many bugs as possible.

    i never use salt , because if you soak the morels they tend to toughen up from salt just soak them in ice water, the bugs ar not much tiny, then cut them open before baking rinse them off , i have used fish batter and corn muffin breading , this is sweet , dip them in and make sure butter is hot turn done let the morel simmer for 30 minute be sure to turn ,same thing with buff balls

    I noticed you didn’t say what you’re frying them in. Just FYI, I like to use Butter flavored Crisco with a little actual butter. Plus, instead of cornmeal, you might want to try crushing up saltine crackers into your flour! I LOVE IT!!

      Usually I use Sunflower Oil, or a mix of that and butter. If I find any this year I'll try the cracker crumbs because you and several others have mentioned it. Thanks for sharing!

    Think using flour you lose some of your flavor, we've always smashed saltin crackers to a fine dust then fried them. We like to bread them that way then freeze them on a cookie sheet until frozen then vacuum seal them & enjoy them on Christmas.

    A little tip for newlyweds. Men, if you love Morel Mushrooms and after frying up a batch, go ahead and offer to share the bounty with your wife. If she says that she's never eaten any and not sure if she'd like them, just say it's a taste not meant for many. Leave it at that and enjoy the feast. I made the the mistake of asking her to at least take one bite. All I can say, after that one taste, my future enjoyment of eating morels decrease by 50%. Just sayin!

      The taste of the mushroom comes through. I like heavy breading though, however it's easy to make with a lighter breading so just make them how you like and enjoy! Thanks for asking DC S!

      There are! I haven't filmed any other videos on preparing them however I can give you some ideas of things I've done with them.
      Morel gravy; great with biscuits. Saute Morels and onions or leeks, domestic or wild onions/leeks, in butter with some salt and pepper for about 5 to 7 minutes. Then add enough flour to make a roux and cook for about 2 minutes until roux is turning brown. Add milk and continue cooking, stirring frequently until the desired consistency is reached. Pour over biscuits or bread or even frybread. Can also add sausage into this if you prefer.
      Morel stroganoff; basically just replace domestic mushrooms with Morels in your stroganoff sauce and make as normal.
      Morel Parmesan; bread Morels like in this video but add Italian seasoned bread crumbs and parmesan cheese, then fry as shown in video. Then top with preferred tomato sauce. I like adding some heavy whipping cream to mine but you can even use a vodka sauce too. This goes great with some baked chicken and a salad.
      Throw the Morels into an omelet or scrambled eggs with some other vegetables for a nice breakfast.
      That's just a few things I've done with them and I hope it gives you some great ideas to enjoy them in other ways!

      instead of regular flour - I like rice flour - that adds a crispy kick to em. - don't have rice flour? take rice and put in blender until it is like dust - may be a while but worth it.

    It seems kinda backwards to me when you place them in flour first then the egg wash. Isn’t the purpose of an egg wash so the flour will stick to whatever you are cooking?

      Doing it this way makes a heavier breading and allows the egg wash to stick to the mushrooms better.

      You're right. Salt water kills spores and anything growing. I use it to kill weeds and unwanted growth in my yard. I hope people don't toss salt water in their favorite mushroom patch, they will be sorry.

      Me too but Morels are very finicky and require a very specific set of conditions that's still not quite understood for them to grow. I know a couple people who had success doing it though so it is possible, even if it's very unlikely.

      Nope, morels have a hollow stem, that's another reason for cutting them in half is to ensure the stem is hollow.
      The one that is really messed up looking was growing underneath an Ash tree surrounded by Oaks so it had a little more of a messed up look to it. Thanks for asking and commenting Bobby!

      They're all Morels, Bobby. The one (2 halves) you're seeing is an older one. The smaller the Morel the smaller the pockets. The large 1/2 you can see into shows one well defined hollow stem. Also the edges of the pockets are sharp. False Morels will have multiple hollows in the stem and outside look like a Morel that was made of wax and then put somewhere hot. Like it started melting and then was pulled away from the heat. There is one false Morel that is really good and books are starting to admit it, the Snowbank false Morel but those you have to be very careful with. Only one false Morel is edible but all Morels are edible. Either can cause an upset stomach to some people so go easy the first time you try them. Heat up your pan, dial 911, then give em a try. (I'm kidding)

    Hunting morels is way better than eating them. The taste of these mushrooms is way overrated. They are not all that tasty in my opinion.
