      You on chemo? My legs have been in pain ever since I started chemo. Doc prescribed norcos to help with it though. I still cook up a storm.

      It is because of a lipolymphodema and a severe autoimmundisease that goes against connective tissue and sometimes my joints. I am supposed to start low key chemo soon, but always had infections getting in the way lately. Wish you well :)

      I was on a very strong chemo. I was in-patient for 5 days at a time for 6 treatments. I'm all done with it. My cancer has responded well to it and has shrunk by 90%. I'm doing radiation now to try and knock it out completely. Getting there.
      Hope your treatment brings you up to 100% as well.

    This looks amazing! I've recently been having health issues and have had to change my diet and lifestyle. Definitely going to try this with a few tweaks. Chef John, PLEASE help me come up with a tasty, low FODMAP recipe that leaves me feeling FULL! I know it's up to me but I'm not the bureaucrat of this fodmap.....diet.     As Chef John didn't mentioned I'm gonna go ahead and do it. If you're gonna do the dressing on an immersion blender like Chef John did, don't use extra virgin olive oil to begin with, it gets bitter when blended. You can use a bit of the regular olive oil to get it started and blended and then manually whisk in the extra virgin if you want.

      +Tabatha Evans There are hundreds of ways to incorporate avocado into your diet. I would suggest a good Internet search. Unfortunately, you might not like it no matter how much you try to dress it up. I sure do hope you can come across something that is pleasing to you. Best of luck!

      Guacamole. If you don't like the taste of avocado either try a recipe where you won't taste them. Or you will have to accept that you just don't like them

      try cutting avocado and some ripe tomatoes into small cubes and tossing it with just-warm rotini pasta, and adding your favorite salad dressing like a pasta salad. it still tastes avocado-y but it becomes part of the dressing and makes the salad very creamy and it's very good.

    Up to how many days can you store this in the fridge ? Because this seems a really good idea for someone who's lazy to cook and looking for a -somewhat healthy- way of eating

      If it were me, I would probably keep it up to 2 days. That's usually what grocery stores recommend on their fresh cut veggies.

    What can I use instead of green beans? The only two vegetables I don't do are green beans and broccoli, which are coincidentally the two main vegetables of my childhood.

    Why is eating/drinking from mason jars so trendy? I do that, but thats because I grew up on a farm AND I grew up in a house with 3 bachelors so we had more mason jars than drinking glasses :P

    I like doing the same with potatoes. My logic is that the oil keeps them from becoming dry by trapping in moisture, like pasta, and any excess starch mixes with the oil leaving them with a creamy velvety coating once tossed and served. All unproven and mostly untested but damnit it's what I feel.

    the dressing was on the thick side because Avocado and Mustard are both enough of an emulsifier to make it into a mayonnaise even without an egg.
