      Simple fix: ask Ebbers to list every ingredient he's ever used or heard of, and then don't use those.
      Going to head off the grumps and nay-sayers right away: I said simple, but I never said easy.

    give them all the ingredients for a burger (bun, beef, lettuce, tomato, cheese etc), but then tell them that they can't make a burger with it

      I would crumb the buns and toast add cheese cook the beef with the tomato, use the lettuce as a wrap spoon the beef mix in and sprinkle the breadcrumbs on top.

      Crumb the buns, reserve a bit for garnish, and mix in with the beef with seasoning to make a meatball. Use the tomatos to make a marinara sauce. Cook meatballs in the marinara sauce, top with cheese and remaining crumbs and gratinate. Serve and enjoy.

    I think my favourite part was Jamie holding back Barry on the togarashi. Shows he's not just blindly Mr Big Flavours, but understands the spices too and knows how much is too much

    I would have loved to see "what the food team came up with" for these ingredients like they did last time with mystery ingredients. Let us see what it COULD have been with more planning and less panic.

    The "root" of the puntarelle is typically used in a dish called Puntarelle alla romana. The puntarelle are cut, put in an ice bath for an hour to get rid of a lot of the bitterness and to curl them. Then you combine them with a simple emulsion of Extra Virgin olive oil and anchovies. It's usually served as a side dish, but sometimes I've seen them as a starter aswell and they are very good!

    The strange thing is when I saw the ingredients I thought of an extremely experimental poke bowl. The chicory would replace the seaweed. Super fine rubarb salsa, fried banana blossom, and the tuna steaks being the protein. Add a few other items

      I like it! I've been making a lot of bowls lately, mostly because they're easy to make, tasty, provide good nutrition and you can throw in whatever is in the fridge. So they're my "leftover ingredients" go to dish these days. Got too many beans from that mexican dish? toss them in. Got leftover bamboo shoots from that stir fry? Toss them in. I love bowls...

    Barry's spontaneity are both frustrating and exceedingly hilarious I don't know that the right reaction to that is to scream or to laugh; I did both. 😂
    Edit: I honestly don't think this would get so many likes and responses. I'd like to make myself clear though; I LOVE Barry, and watching Jamie's and Mike's frustration genuinely cracked me up! 😂

    actually, Baz was nearly on the money with the banana blossom. Here in Thailand they often make a fritter out of it. Its generally chopped up, mixed with some chilli paste, msg and whatever and then doused in a batter made of "crispy flour" and water then deep fried. Delicious. But strangely, over here they believe it helps breastfeeding mums make more milk! Whatever....!

      It's true, banana blossom is helpful for lactating mothers. In South India, banana blossoms are believed to be good for overall women's health. It is also used in some ayurveda medicine I believe.

    Small correction: the 7-spice mix that they use is actually called shichimi (七味). Togarashi (唐辛子) is just the Japanese name for a chilli pepper. Red chilli powder made from togarashi (唐辛子) is one of the spices in the shichimi (七味) spice blend.

    I think Ben won. The thing the normals are still missing seems to be plating skills. I would love an episode about different techniques to teach us normals - maybe bring in James for an episode as he was always really great at it

    I love how Barry was just... all over the place XD Jamie actually had a pretty good idea in mind, then the Wheel of Baz seemingly spun and completely threw it off XD
    Would say though, this does show the differences in a chef and a normal - Ben's dishes actually looked to be one dish intended to be together, where Jamie and Barry's looked more like a mixture of dishes which happened to be together.

      I feel like a lot of that was just plating, though. The normals could have put the tuna on top of the rice & had the blossoms on the side on the same plate or on top with a drizzle of (actually good) sauce, & just the pickles separate. There was no reason to use that many plates, it made things look far less coherent.

    Had I been in Jamie's position, I think I might have walked over and joined Mike on the side after Barry messed with the pickle despite being told/asked not to.
    I respect Jamie's resolve to at least see those gorgeous tuna steaks through, though.

    Question for the team! When the meals are prepared one at a time, as opposed to simultaneously, how do you keep the first meal at its appropriate temperature(s) and tasting fresh while the second is being prepared?

    The banana blossom gave me a (hopefully) fun video idea for you guys: "Ingredient mastery". Take an ingredient you like but are not too familiar with, like banana blossom, and make many different dishes with it (sometimes with it being the star of the dish, sometimes as a support for a different ingredient) until you are familiar with it and can integrate it into future dishes.
    Because I think this is like the third or fourth time you guys had banana blossom in a video in the last couple of years, and even Ben panicked at the idea of using it today.

      I was thinking the same thing. By using the seeds to insulate the tuna steak from the heat, he also avoided the "dreaded" grey line.
      Compare Ebers' result (13:04) to Jamie's (13:15) and you can see what a massive difference it makes in the appearance.
      I don't like tuna, so I wouldn't eat either, but Jamie's certainly looks a lot better to my eyes.

    I love puntarelle. The leaves can be sautéed with garlic while the puntarelle, the stems and 'buds' can be thinly sliced placed in an ice bath to curl and served, Roman-style, with an emulsion of lemon juice, anchovies and, for those who like it, garlic.

    You could see where Jaime's mind was going, a delicate sesame crusted Tuna, pickled rhubarb, he was thinking of something subtle, and along comes Barry driving with his clown shoes on.

    The sesame tuna steaks were gorgeous and would have a nice crunch too. The banana fritters were spot on. Both did fine with the green stuff, and that herb oil took it over the top - yum.

    Chicoree Salad can be excellent if you have the right sauce for it. Cook 3 eggs, seperate the egg yolk, chop the eggwhite down and toss it into the salad. Then crush the yokes with salt, pepper, mustard and honey, add a bit of vinegar for it to properly dissolve, then slowly add oil to emulsify the mixture into a thick creamy sauce. Goes very well with the bitter Chicoree.

    For puntarelle they are typical of north abulia. You want to boil to get rid of bitterness (the bitter water drunk in the morning is good to the body specially liver), then you use it in the simplest way possible because it has a very delicate taste that disappears with other food added

    Jamie has the patience of a saint, I would've lost my shit with Barry. The way he goes off the rails with no consideration, is such an anti-team player and cannot take the criticism he rightfully deserves for it must be exhausting. How he hasnt lost his teamwork badge is beyond me. 😆

    Absolutely love this format! All three cooking did great with ideas on ingredients I certainly didn't know. The scoring was also nicely done.

    Ben’s tip about using leaves to make an herb oil is a good one, but has to come with a caveat. If you’re adding garlic, either use it quickly or add in an acid. Oil and lack of oxygen are the perfect environment for botulinum, and more than one case of poisoning had happened in the past from homemade pesto. Safe cooking friends!

    What a combo of ingredients. Would love to see a beat the chef with Ant Eggs as an ingredient, they are hard to get in this part of the world (they come in cans) but was pleasantly surprised when first served them.

    I actually thought it would be closer on the scores.
    For odd ingredients Talegio cheese. Its deceptive as it smells strong but its quite mild in taste. Makes for a great cheese pull too.

    Whilst I love the pretentious ingredients & gadget episodes, my heart still belongs to the cooking vids. Esp the Normals’ collaborations vs the chef, so we can see how they level up ingredients at the same time. I did have every sympathy with Jamie in this one., though! I spent years working with a colleague who’d throw a ‘spontaneous spanner’ into works at the last minute. We created great ideas together but that plaintive, ‘what are you doing?!!!’ sounded v familiar ;)

    Great video, guys! It actually helped me because I get this weekly veggie box and often I get puntarelle and did not know what to do with it! This brings me to my suggestion, I often also get black salsify and topinambur. Would be cool to see you use those :) Lots of love!

    Love the video! Wish you guys would do a video on homemade sauces! Chipotle, garlic aioli, onion relish etc! Or recreating brand dips, like dominos garlic dip, nandos perinaise 😍

    Hearts of palm could be a good ingredient for a mystery box, I normal use them to make vegan calamari and crab/tuna for sandwiches

    Jamie hit a bullseye this episode. Barry missed the board entirely. Therefore, it was really interesting to see an empty kitchen making a beautiful tuna, then a disastrous mayo and tahini combo to go along with it. They canceled each other out so much it was like watching John Cena cook. Let’s just revoke the Teamwork badge from Baz and go next, boys.

      What he made doesn't matter. The teamwork badge is more focused on how you make the dishes in coordination with your teammate. Barry just did things he thought worked without consulting with Jamie for half of the cook.

    This is incredible. Have you ever cooked with bean curd knots? Tofu skin knots? I’ve recently started eating them and they are incredible! Strange to use if you’ve never cooked with them before though.

    In hospital (been in for week+ now) in my own room bored after having a stroke at 33 and I’ve been looking forward to this video dropping all day!     In South Africa we have waterblommetjies. It translates to water flowers. It gets used much like green beans in casseroles. Goes well with lamb dishes. Its iconic of the wine routes in Western Cape. Please try it!! Its an amazing vegtable!

    Banana Blossoms are used fairly often as a meat substitute when making Biryani or Pulao where I come from in Southern India! They're absolutely delicious when marinated in spices and slow cooked till they fall apart.

    Great episode guys, btw that Japanese spice mix with 7 items is Shichi-mi (shichi meaning 7) of which 1 of the mix items is togarashi which is the Japanese term for capsicum/peppers.

    Loved Ben's dishes and loved the hug between Barry and Jamie. Banana blossom is so yummy if you shred it finely and saute it with coconut shavings and spices until it dry.
