For one year I intended to learn cooking Asian recipes, but was always so intimidated by all the pantry staples there that I just didn't understand. Thank you Professor, now I must pursue this quest.

Haven't watched the vid all the way thru yet but I am really hoping that he offers a "narrowed down" or "bare minimum essentials" version of that huuuge array of ingredients. I wouldn't be surprised if many people either can't source, cant afford, and/or don't have space for all of that!
Most of them are grouped together pretty well. Having 1 kind of every type should be good enough, just get the one where he says he use the most. The pastes and spices are difficult to narrow down as they have a very distinct taste that is very hard to substitute, but many of them comes in powdered form which is nice as it takes up less space and faster to prep

Just wanted to mention that if you or family member or friend are allergic to fish/seafood Vegan fish sauce exist my Dad & my older brother use Ocean's Halo because they have an allergy to seafood (Dad's allergic to all forms of seafood, we even avoid stuff like seaweed just in case). 2. Mentioning this in any Vegan Oyster also exists, My Dad uses(I'm typing this as looking at bottle of it in our kitchen so typing this as I'm reading the label) Gluten free Vegan Oyster flavored Sauce Brand name is: Lee Kum Kee
3. For Hoisin sauce my Dad & older brother use Vegetarian Hoisin sauce Also made by Lee Kum Kee . By the way I have no intention of undermining you're video just wanted to suggest some alternatives for people with seafood allergies.
I'm not sure how much of important the details about those sauces I listed is important/relevant. Also apologies for the formatting of my comments I'm typing on my phone and I'm dyslexic so apologies for any spelling/grammar errors or anything along those lines.
