I do the same with spaghetti that I eat with cucumber slices! I even add some soy sauce and some fish sauce as well! 😋 I didn't know it had a name in Korean.
I make this time to time for my family, especially in summer. I use rice noodles, 쌀소면, from a Korean store to reduce my overall gluten intake. It taste just as good as traditional thin flour noodles. I also put some slices of tomato on top, just to get some more veggies into my kids. I think it works well.
Hi Maangchi! Do you know if this would keep overnight? I think I would really enjoy it for lunch but I’m not sure if the noodles would get too gummy if I had to prepare it the night before. I know you have plenty of other yummy portable recipes so I know I have options if this one won’t work well. Cheers!
How come noodles I buy is always white , beaks after mixing and I’d not sticky and when I order from a take it’s always see through , elastic and sticky? 😢 I buy mien glass noodles , soy noodles 😢
Any type of kimchi doesn't go bad if you refrigerate it. It will keep fermenting in the refrigerator. When kimchi ferments, it tastes sour, so as time passes, the kimchi will get more sour. Press down the top of the kimchi occasionally with a spoon so that the top part of kimchi is submerged in kimchi brine.
yes it is eaten cold :) I'm not sure it would be the best for packed lunch as the noodles texture might be a bit soggy after sitting that long? you could give it a try and see if you like it

It's best to serve the noodles immediately after preparing this dish; otherwise, they will become soggy.
Prepare your ingredients ahead of time, box it , only leave noodles for the morning. Boil water in your kettle and cook the noodle !
