  • Baba ganoush is a delicious dip made from roasted eggplants. It's creamy, savory, and exudes an irresistibly smokey flavor. Want to learn how to make baba ganoush? I've got you covered in today's video!
    Ever since my trip to the Middle East years ago, I've been savoring baba ganoush. Now don't get me wrong, hummus is just as delicious. But this dip has an insanely scrumptious smoky flavor - all thanks to the method of charring eggplants.
    Baba ganoush is great as part of a mezze platter (common in Middle East and Mediterranean cuisine), as a healthy appetizer or easy snack. Enjoy!

      I make eggplant european style with a little homemade mayo, evoo, minced garlic, green onion, salt pepper and a little cayene. We eat it on bread. It’s amazing

      Hi! I made my first batch today and it turned out great. I have a smoker I got on offerup for $30. It is NOT hard to use. GET ONE. I cut my eggplant in half and added olive oil, salt, and pepper to the flat sides. Just left it in there with some other veggies and some meats I had, and 3 hours later I had beautifully smoked and cooked eggplant. Just added tahini, lemon juice, salt, pepper, and roasted garlic, and I blended it. It was great!! You can always add more olive oil too. I’m going to check out your flatbread recipe now! Thanks for teaching me that the smoked flavor of the eggplant is what it supposed to come through the most, now I really am sure I did it right! I’m tellin ya, just buy a smoker, cut them in half face down, and don’t even think about it. 3 hours later you’re just minutes away from an amazing Baba Ghanoush.

      I'd strongly recommend trying pomegranate seeds to garnish ... it adds a burst of sweet freshness and goes so well with baba ghanoush! I used to work in a Moroccan restaurant and that is how they would garnish. Its my favourite thing about baba ghanoush

    As a Lebanese i would highly recommend garnishing the baba ganoush with pomegranate seeds! Makes it even better😊

    Baba ganoush is definitely my favorite! As a middle eastern I would recommend:
    - making tiny holes with a knife in the eggplants before grilling
    - picking a male eggplant (look at the bottom); as it has less seeds and less bitterness

    I hope you read this. Here is a Palestinian🇵🇸🌿❤ recipe for you:
    1- boil some peeled carrots until tender
    2- smash a little garlic and one green hot pepper in mortar and pestle
    3- add the carrots and smash them well ( you can do this in a food processor )
    4- along that add ( lemon, tahini, olive oil and salt ) and mix them vigorously together in a circular motion until they become fluffy.
    And here you have it. We call it "Salatet Jazar". In case you didn't notice we palestinians like to mix everything with garlic, olive oil, tahini and lemon haha👅
    you can garnish with mint leaves or parsley and a drizzle of olive oil of course.♡

      What can you do to smash the garlic and hot pepper if you don’t have a mortar and pestle

      @@user-_-37470 I would use a handle of a knife or one end of a rolling pin as the pestle and smash them on a cutting board or in a bowl :)👍🏼

    If you want to follow 2nd method of peeling, applying oil on the eggplant before keeping it on gas stove will help in peeling the skin easily. My mother and grandmother are doing it from ages. Give it a try.

    I had a favorite baba ganoush I used to enjoy in Connecticut at a local restaurant. Fast forward, I move to Georgia and couldn't find its match. I've attempted to make it several times, but this is the closest to the original I've had. I used your tahini recipe and grilled on top of the stove as you did. I believe, that's the secret. Only variation was I added 2 kinds of garlic (raw and baked). I love garlic. I allowed it to marry overnight and topped it with diced tomatoes, onion and parsley. Thank you for great instructions!

    Always appreciate that you mention various methods of cooking :) when I see "roasted" on the title I literally thought "ok this isn't something for me (because I don't own an oven or outdoor grill), but I'll keep watching anyway because it's always fun to watch" but then I'm pleasantly surprised that you can roast it on top of the stove!     I have never made or eaten Baba Ganoush, but this recipe looks SO delicious 😋!!! I use eggplant mainly for pizza base 🍕. It is easy; just slice the eggplant 🍆, add some olive oil to the slices and salt & pepper 🧂. Then add the toppings 🍅 of your choice and bake your eggplant pizza in the oven 😊

    As a someone from Middle East, I personally put the eggplants to the highest level of the oven, which is grill.( and yes it gives taste of smoky baba ganoush)

    I am a fan of stove roasted eggplant. I would recommend putting a plate on top of the bowl instead of plastic wrap. No waste no extra plastic 😉

    We have this dip in India too ^^ . But its made totally different with tamarind hehe. We call it "Kathrikai Gotsu" (Eggplant gravy?)in my Tamil language. I am from the south and this side dish is very popular and special. If you are served this dish then that person is a good cook and cares about their guests. We have it with ven pongal (White savory pongal) or rice though. A lot of our side dishes are made to be had with rice/dosa/idli/pongal. These are the typical south Indian main meals. Your version seems like a good dip for chips! Like corn tortilla chips! or toasted bread! or even a spread on quesadillas!

    We also have a similar dish in Romania, but instead of tahini we usually add mayonnaise and maybe a little bit of finally chopped onions. It's nice to see variations of childhood food around the world 🥰

    As much as a gas range is the preferred method as opposed to using an outdoor grill, it's a lot more convenient to use an oven and add liquid smoke during the mixing process than having to clean up a mess. Will definitely try it out though.))

    Hi, I make mine almost the same...I make slits in the eggplant and add sliced garlic pieces in each slit so the garlic will get a lovely smoky flavor also.

    I prepare Baba ghanoush with the exact same recipe, the only difference is that I use a special wooden tool that looks like a cross between a knife and a hammer (it's not sharp), so that the eggplant stays white (you can find it in Israel/Romania/Turkey). I have no idea where you can find it in the US, but with a bit of an effort I'm sure you can :)

    Yes! I love baba ganoush!🍆💜 This is how my mama makes it except she uses mortar and pestle haha try to add pomegranate seeds on top, it's delicious. go really well together, thats how we make it in Palestine.

    I LOVE eggplant, and baba ganoush. Eggplant is one of those things that is underappreciated and just one of the ingredients in my spaghetti sauce. I learned about baba ganoush in the classic cookbook by Claudia Rhodan from the 80's. I found the one and only copy a bookstore had left way back then, just after she had done the cooking show that accompanied it. Anyway, one way to pick eggplants that have lesser seeds is this....."Dots, not slots". The opposite end of the stem should have a "dot" (indicating a male fruit), where as a "slot" (female fruit) has more seeds. Just another male gender description and preference....but oh well. It's just food.

    I grew up eating my dad's baba ganoush and his has so much garlic that I pretty much think any other variation is bland lol! I have made it home and definitely follow the same dad's recipe with tons and tons of garlic, no paprika or cumin either

    You can grill both eggplants perfectly by grilling them in an oven. Finish off by placing a piece of charcoal (ignited on your clean stove) in a small metal bowl into your oven with a few drops of oil on it to smoke it.

    In india we make an Aubergine "Bharta" pretty much the same way but without the tahini and with mustard oil and red onions and coriander!!! It's pretty staple and omg Delish!
    Oh a tip on how to quickly and beautifully char an aubergine... Just make one deep slice half way through the eggplant and then char it.... It ensures the inside cooks beautifully and much quicker!

    As I don’t have a stove, I take 2-3 eggplants and make in each eggplant 2 deep cuts with a knife, in those cuts I push a garlic clove each and then bake in oven for 45 min or until the skin breaks up a bit, then I cut in half and scoop out the flesh and remove the steamed garlic. The flesh I first squeeze a bit in a cloth to remove excess liquid. Then I finely chop the eggplant and add the steamed garlic plus 1-2 fresh garlic cloves. Then I add as well tahini, lemon juice, cumin, coriander seeds and olive oil. Salt and pepper. At the end goes chopped cilantro and parsley. Sometimes my mum lightens it up and adds for herself 2-3 Tablespoons of Joghurt :)))

    I would recommend Just doing this in the oven.. no mess... no watching... takes 45 mins and you have the same results. Add some smokey paprika or chipotle for those that like spice... delicious and much easier!

      pesto12601 it’s actually not the same :) the authentic one is to use stove top and roast the eggplant on top. It gets really great and deep flavor that cannot be replaced by any spice.

    Nice. In india ithis smoky aubergine dish is called Baingan Bharta ..... mostly eaten in the Eastern part of India and North India. It is an integral item of indian cuisine. And my favourite I will try with TAHINI... thank you 🙏

    I just made this recipe this morning. Grilled the eggplant on my propane Weber BBQ. Forgot to weigh the eggplants before grilling. I ended up with at least 4 cups of it after peeling off the skin. Finished product doesn't have the stronger taste of store bought baba ganoush I'm used to. VERY mild flavour. I am thinking next time I make this to cook the peeled eggplant (after brushing them in EVOO) directly on the BBQ grill as I do for grilled veggies. The sliced and BBQ'd eggplant seems to have more of a 'barbeque' smoky flavour. I'm not one to eat much garlic, but I found 1 clove definitely wasn't enough and 2 was still mild in flavour. How much in cup sizes do you think you get from using 2 1/2 lb of eggplant? Thanks in advance, and thanks for posting!

    The brown flesh of the eggplant right under the skin is THE best part and has the most smoky flavor! Try to get as much of it as you can!

    I make this recipe all the time and leave out the olive oil to save calories and it is outstanding. Only complaint is my family doesn't like me stinking up the house when i char the eggplant, lol!

      This recipe is traditionally done on a grill - so the stove top is the next best method if you don't have a grill :)

    I don't suppose you could tell us at what temp and for how long the roasting would take in the oven? I am not fortunate enough to have a gas cooktop - electric only. I realize it won't be as smokey, but I actually don't mind that as I have bought pre-made baba ganoush that I found too smokey for my taste before. If it isn't something that you have looked into before (since it isn't your preference) then thanks any way for the recipe and I'll just experiment myself. Thanks for all your yummy recipes and healthy hints!
