That’s impressive if they are actually doing that. The Pho place I worked at cooked the tofu in the same stuff as they cook meat stuff, and a lot of places in Japan I noticed say it’s “vegetarian” but they used a fish base still and what not. Definitely a lot of work to make vegetarian versions of those delicious dishes, they look great.

The difference is that you are young (and beautiful, if you may forgive me speaking of the truth) whereas I am in the twilight of my life. I remembered the “boat people” who settled in Hong Kong in the early 80s. It is very sad what war brought to humanity. It is equally triumphant to see Vietnam rising from ashes and on her way to becoming the phoenix of SE Asia. You, as a young and upcoming pillar to your country has a long and harsh road to go. My mom's company was in "quan nhat" and I lived in "quan Binh Thanh," so, I was familiar with and traveled both. But that was 1995, almost 30 years ago.

Nice introduction, Van. Veggies helped to keep Vietnamese women slim & attractive. I am wondering what's the ingredients in the broth & dipping for the veggie dishes. In my country, we have a veggie dish called 'lei char' (pounded tea rice). The broth is made from basil leaves, mugwort leaves, mint leaves, coriander leaves, peanuts, sesame seeds, peppercorns, and tea leaves., which are grinded and pounded into herb paste. The paste is then mixed with some boiling water into a thick broth & is served together in a bowl to be drenched into another bowl of rice topped with several sides of vegetables, peanuts, soya beans & tofu.

Do the Vietnamese eat a lot of hot Peppers? meaning when ordering let them know few chilies or no chilies.. What about ginger root? I like Asian food containing ginger.
