Frugal tip of the day: I discovered when we moved to France that our market's deli section keeps the ends of ham, sausages, and other meats in a separate bowl for sale at about half price. Since then, I always check there first to get a nice 'talon' or heel, before making other purchases. Some days I hit the jackpot, like this week when I got a big end of premium baked ham and three tail ends of chorizo. It's always a treat when I arrive in time to get the knuckle bone, like yours - the menu immediately changes to bean, cabbage, or pea soup. A chunk of roast beef means stroganoff or beef/mushroom/barley soup, and a slice of roast pork flavors a stir fry. I don't know if they do that in the States, but if you go to a full service deli, you should ask.

I remember we used to get ham salad in the cafeteria in college. It was always a treat. Haven't had anything similar since then (40 years now----egad!!). Since we're going old school, I think I'll have mine on Ritz crackers, possibly topped with a caper. Yum! Lol, we're going to have to start calling you Grandma Frugal! The little paper-wrapped can was a rare treat, eaten as is. I knew the other spreads as big batches in enamel pans, kept in porch fridges for field hands to make sandwiches on breaks. Whatever cold meats were available and other ingredients needing used up...who even needs bread?

My grandmother always had those small cans of Underwood Deviled Ham and would bring them out for us kids to eat with toast or saltines. She is also responsible for introducing me to sardines and smoked kippers, two of my favorite foods, she was great.

Looking for a simple recipe without too many things in it. I don't like pickles or the juice so was glad this did not have any. I have some small cans of flakes of ham and have not tried it yet, but did like that Underwood Ham Spread many years ago. I had ingredients in mind of what I would try and you hit them right on for me so will give it a try for lunch. Thanks for the smaller quantity recipe that will be perfect for me. I appreciate your note that it tastes better the next day.
In my family it was chopped ham with a jar of pimentos the red ones with cheez wiz all blended together. My aunt's would make finger sandwiches or roll in chopped nuts for crackers. Very nice for the holidays.

Have you ever made breaded tomatoes? In casserole dish add canned tomatoes. Broken up bread. Dried out even better. Add sugar and butter. Bake about 30 min. Really good but may not be the best looking.

My mom use to make this when I was a kid I hated it then but love it now as and adult. She would make a ham and we would eat for a holiday or when company came. After that day Breakfast with eggs, ham sandwiches and at dinner pinto beans and ham. We were poor back then but lucky enough to afford a ham which we ate on all week.

I would eat this but not that stuff in the can because it’s cat food .... I don’t eat processed meats unless I make it so I know what goes in it ...don’t trust that cat food from the store. 😖 UPDATE: I just made this today. I normally don’t eat ham but I found a nice small lean slice of ham at PUBLIX today so I decided to make it. It’s fantastic on bread with a cup of coffee 😉. I did not had peperika however but the splash of Texas Pete hot sauce really made it good … so now I will always think of your video on making this and I am thankful for it …. We add finely chopped crispy bacon and finely chopped red onions to ours. When making a sandwich before we close the sandwich we add more coarse chopped or fine diced red onion, depending on your tastes a swirl of extra hot sauceas well. If we use deli ham trimmings i will give them a quick fry in a pan to get abit of colour and flavour before chopping it fine. Most often i will use leftover roasted ham/pork/beef even chicken to make the deviled sandwich spread, with whatever extra herbs and spice i feel like. The recipe can be endlessly adapted to your preffered flavour profiles.
I skip the celery, but add some finely diced sweet pickles ( 3-4 TBLSP) and a dash or 2 of the pickle juice....The sweetness goes great with the salty ham and hot suace....

This sounds much better than the deviled ham or chicken from the little store cans. -- Id suggest a carrot or two, chopped fine like the ham and celery, and the additions like onion or chives, pickles/relish, and olives would be fine .he smoked paprika would be a very nice thing for the regular recipe, a good substitute for regular paprika .he hot sauce and pepper might need to be adjusted, depending on how mild or spicy-hot (caliente) people like it.ut a little kick would be good.The store-bought is OK, but it always feels grainy and too salty to me. Your recipe sounds way better, and yes, tomatoes for garnish. Hmm, a tomato salsa or a marinara sauce eitherr one might work as a topping, not overly so, for the spread, and good bread, some grated cheese :) Gosh, I wish I had the ingredients on hand. :) Thanks, Grandma and Grandpa. good stuff

The devil is in the detail. And no one does it better than Grandma.
We add finely chopped crispy bacon and finely chopped red onions to ours. When making a sandwich before we close the sandwich we add more coarse chopped or fine diced red onion, depending on your tastes a swirl of extra hot sauceas well. If we use deli ham trimmings i will give them a quick fry in a pan to get abit of colour and flavour before chopping it fine.
Most often i will use leftover roasted ham/pork/beef even chicken to make the deviled sandwich spread, with whatever extra herbs and spice i feel like. The recipe can be endlessly adapted to your preffered flavour profiles.

I skip the celery, but add some finely diced sweet pickles ( 3-4 TBLSP) and a dash or 2 of the pickle juice....The sweetness goes great with the salty ham and hot suace....

This sounds much better than the deviled ham or chicken from the little store cans. -- Id suggest a carrot or two, chopped fine like the ham and celery, and the additions like onion or chives, pickles/relish, and olives would be fine .he smoked paprika would be a very nice thing for the regular recipe, a good substitute for regular paprika .he hot sauce and pepper might need to be adjusted, depending on how mild or spicy-hot (caliente) people like it.ut a little kick would be good.The store-bought is OK, but it always feels grainy and too salty to me. Your recipe sounds way better, and yes, tomatoes for garnish. Hmm, a tomato salsa or a marinara sauce eitherr one might work as a topping, not overly so, for the spread, and good bread, some grated cheese :) Gosh, I wish I had the ingredients on hand. :) Thanks, Grandma and Grandpa. good stuff
