I remembered using a grinder that clamped onto the kitchen work bench to grind leftover ham from a boiled shoulder or shank for my mom to make this for sandwiches to send to work with my dad. Also used to grind up our own cheap cut of beef for burger. 🎉

Without the spicy element, you can find this in most US deli departments. It's called ham salad and is great in sandwiches. Iirc, sandwich spread is the same recipe but with bologna. My family loves it. You have inspired me to sprinkle some paprika or cayenne on my sandwich next time.
Goodness... who doesn't remember those little cans of deviled meat?! Had no clue you could actually make it (Duh!). Anyways... this reminded me of spreads I used to make (and my deviled eggs). Found it in a very old cookbook. It was for deviled eggs... then it gave versions to make bologna (or ham) spread and a roast beef spread that was awesome. At the deli counter I used to be able to buy bologna or roast beef "ends" cheap... mince them up... then mix them in mayo, mustard, sweet & dill relish. The only difference was in the roast beef one they added a splash of Worcestershire sauce. Very addictive on sandwiches or crackers. The first part of this recipe reminded me of those... and that I hadn't made them in a long time. Shirley in NH

I've looked for a video on making our own sausage for panakelty and other dishes you've shown here. I can't find much that looks right in the stores here - what kinds do you recommend? By the way, I've tried a few of the dishes you've presented here, and they've been good. Haven't done one with pastry yet, but soon! Now the question is do you think this would freeze ok, if it did I would do it in large ice cube trays so can just defrost the occasional portion when and if.
Nice! Ever tried making your own potted meat using a slow cooker and shank steaks? Super easy.. and you get bone broth too. Just have to strain it and chill, skim off the fat and you got bone broth. Old world recipe going back to the 1700's or earlier. It's cool stuff.
