English recipe follows⬇️⬇️ 秋葵炒青衣柳 材料: 急凍青衣柳1斤 秋葵2包(約半斤) 辣椒仔3隻(可以不用) 處理: 1. 青衣柳,清水解凍。 2. 青衣柳解凍後,倒去水分,加入粗鹽1茶匙乸5分鐘,去除雪味,及加入少許鹹味。 3. 青衣柳,清水沖洗乾淨。 4. 秋葵,加入粗鹽1茶匙及清水浸1分鐘,去除表面污漬。 5. 青衣柳,用廚紙索乾,1開2。 6. 青衣柳,加入黑椒鹽1茶匙,撈勻。 7. 秋葵,清水洗乾淨,擎乾水。 8. 秋葵,切去頂部,打斜1開2。 烹調: 1. 大火在鑊中燒熱油4湯匙。 2. 青衣柳,沾上少許生粉,放鑊內煎。 3. 青衣柳,一面煎至金黃色,反轉另一面繼續煎。 4. 青衣柳,兩面已煎至金黃色,推向鑊邊,加入秋葵,一齊炒勻。 5. 加入調味料: a. 美極鮮醬油1湯匙半,炒勻。 b. 糖半湯匙 6. 加入辣椒仔,炒勻。 7. 完成,上碟,可享用。 Stir frying ling fillet with okra Ingredients: Frozen ling fillet 1 catty Okra 2 bags (about 0.5 catty) Chili 3 Nos. (Optional) Preparation: 1. Ling fillet, defrost in tap water. 2. Ling fillet has been defrosted, pour away water. Add in cooking salt 1 tsp, season for 5 minutes to remove unpleasant smells and add some salty tastes to it. 3. Ling fillet, rinse thoroughly. 4. Okra, add in cooking salt 1 tsp, soak in tap water for a minute to remove dirts on it. 5. Ling fillet, dry with kitchen towels. Divide each one into 2 shares. 6. Ling fillet, add in black pepper salt 1 tsp, mix well. 7. Okra, rinse thoroughly. Drain. 8. Okra, cut its anchor, slantly cut each one into 2 shares. Steps: 1. Heat up oil 4 tbsp at high flame in wok. 2. Ling fillet, put little tapioca starch on it. Fry in wok. 3. Ling fillet, one side has been fried into golden yellow, flip over and continue frying. 4. Ling fillet, both sides have been fried into golden yellow, push it to the edge of wok. Add in okra, fry well. 5. Add seasoning: a. Maggi sauce 1.5 tbsp, fry well. b. Sugar 0.5 tbsp 6.
