Raffaello cake that melts in your mouth! Simple and very tasty! 😋
Ingredients:
Eggs 3 pcs.
Sugar 160g.
Grind peeled and toasted almonds (or use almond flour) 60 g.
Coconut Flakes 130g.
A pinch of salt.
Whisk eggs with salt and sugar until white.
Add the shavings and almond flour and mix gently with a spatula.
Spread the dough out in a thin layer on a Teflon mat or parchment paper.
Shape into a casserole dish with a diameter of 18 cm.
Bake in a preheated oven at 180°C for 10 minutes.
You get 5 crusts.
Cream:
Cream cheese 300 g.
Sour cream (20%) 110g.
Cream (33%) 250 g.
Condensed milk (or powdered sugar) 170 g.
Cream, cheese and sour cream must be cold.
Mix together the cream cheese, condensed milk and sour cream. Add cream and whisk.
Let set in the fridge for 5 to 6 hours or overnight.
