I like pie better than cake. When we were planning our wedding (almost 15 years ago) we decided to have a cake but also assorted mini pies. It was an Autumn wedding so we had apple, pumpkin, chocolate cream and fruits of the forest pies. Everyone loved them. And I make a pie probably twice a month, and I have a slice for breakfast almost every day. You never know what the day will bring so I like to start my day with a dessert and a black coffee. Lol!
I'm a pie person, too. I read recently that Russians serve pie instead of cake on birthdays. They spell out the persons name on the crust by carving it into the crust or using extra dough to form the letters. As far as I know, I have zero Russian blood, but nonetheless that's a tradition I'd happily adopt!

I would like the crust but not sure about the filling. Granny Smiths are the only apple I like in pies, a little nutmeg brings out the flavour, and I like my apples done in the oven, I add about a teaspoon of minute tapioca to absorb the extra juices and then the crust is not very mushy at all. Oh and I also mix a bit of cinnamon into the sugar on top of the crust. I'm kind of picky!

i actually learned a lot from this, pie doughs are so polarizing, you get different answers from different people and when you ask "why do you do it like that?" they never have a good answer they just say "just do this", this video explained, thank you

I made an apple pie with Elstar, a popular German apple, and it naturally developed a rose water aroma, which was fascinating, the smell was amazing. If you ever use Elstar make sure you like rose water in your baking.

My grandmother from a Midwest pioneer family, taught me how to make apple pie. I've never heard about cooking the applies beforehand. And using a plate to mold the crust. I learned a lot in this video. It's all Genius! - must try

Mr. Yosses' crust looks a lot like the traditional French Canadian crust, used for blueberry and apple pies, for "tarte-à-sucre" and for the ultra-traditional Tourtière. That kind of crust is called "brisé" ["broken"]. This is lumberjack food, meant for outdoor workers in a cold climate. The favoured apple is the Mackintosh, which cooks just about perfectly and has some tartness. If Yosses is a New Englander or from the Great Lakes region, he would have probably been familiar with this approach.
Usually when you cut a pie...or at least when I do...the filling falls to the sides when you pick it up. That was the perfect slice and it was still warm. 😍

I loved this video and the pie-making demonstration. I have made a lot of pies in my time, considered pretty good at it, but I learned new things from this demonstration. That apple pie looked fabulous! I was surprised that apple pie is President Obama's favorite pie as I remember reading years ago that his favorite was cherry pie, and even saved a newspaper photo of him in a cafeteria choosing a piece of cherry pie. That is our family's favorite and, as we also loved the Obamas, we were vicariously happy that they also preferred cherry pie. Oh well....we love apple pie, too! Thank you, Mr. Yosses, for this wonderful video and anecdotes.

That picture of Obama at 0.31. He *really* likes pie, no really. He's like captivated by the flaky pastry, the tart yet sweet apple filling, the comforting taste... Get a partner who looks at you like Obama looks at pie lol.
I love using Royal Gala in my apple pies, the apples themselves have a lovely apple flavor and they’re not too sweet nor too tart, and when baking the pie they keep their structural integrity and remain slightly crispy if cutting the apple into chunks rather than slices, no corn starch slur needed even. Stir the apples in sugar and cinnamon on the stove for a couple of minutes before adding them into the pie. It’s just a really simple but oh so delicious pie, no pre baking or anything. Prepare the apples while the pie dough is resting and then it’s just roll out the bottom crust, add apples, roll out top crust and ready to bake after adding some egg wash and a sprinkle of sugar. I really need to make pie soon again!
He seem like such a delight to be around, I could listen to him all day, the way he makes his apple pie I would really like to taste it and apple pie is never my first choice, I’m more of a peach cobbler chick.

I've seen people use a metal tray on a pre-heated pizza stone as well. No pre-baking needed.
You do need to cook the apples enough beforehand to drive off a lot of that water.

Mr. Yosses' crust looks a lot like the traditional French Canadian crust, used for blueberry and apple pies, for "tarte-à-sucre" and for the ultra-traditional Tourtière. That kind of crust is called "brisé" ["broken"]. This is lumberjack food, meant for outdoor workers in a cold climate. The favoured apple is the Mackintosh, which cooks just about perfectly and has some tartness. If Yosses is a New Englander or from the Great Lakes region, he would have probably been familiar with this approach.

@@SarahRenz59 Red delicious apples are fine, it's just that they are grown in the pacific northwest most of the time, and they don't develop their flavor in a cooler climate.

I loved this video and the pie-making demonstration. I have made a lot of pies in my time, considered pretty good at it, but I learned new things from this demonstration. That apple pie looked fabulous!
I was surprised that apple pie is President Obama's favorite pie as I remember reading years ago that his favorite was cherry pie, and even saved a newspaper photo of him in a cafeteria choosing a piece of cherry pie. That is our family's favorite and, as we also loved the Obamas, we were vicariously happy that they also preferred cherry pie. Oh well....we love apple pie, too! Thank you, Mr. Yosses, for this wonderful video and anecdotes.

I love using Royal Gala in my apple pies, the apples themselves have a lovely apple flavor and they’re not too sweet nor too tart, and when baking the pie they keep their structural integrity and remain slightly crispy if cutting the apple into chunks rather than slices, no corn starch slur needed even. Stir the apples in sugar and cinnamon on the stove for a couple of minutes before adding them into the pie. It’s just a really simple but oh so delicious pie, no pre baking or anything. Prepare the apples while the pie dough is resting and then it’s just roll out the bottom crust, add apples, roll out top crust and ready to bake after adding some egg wash and a sprinkle of sugar. I really need to make pie soon again!
