I make bottle staves from ex-Bourbon barrel stave Oak, and long-term yard/ air dried Maple and Hickory... The difference between them and the generic ones you buy off Amazon etc. is crazy. I can bottle-finish a $20-25 bottle of JW Dant or OGD114 into something that tastes like (and sometimes better than) a $90+ Penelope/ Elements/ 2XO etc. in less than two months! When I'm done cutting them to fit to a bottle mouth, you can see the grains of wood sugars with your naked eye, and some of them look 'peppered' from the tiny sugar dots bursting from heat at the end of the toasting cycle. Good info on the importance of the initial stave-aging here!!!
Maryland resident here. We got some interesting whiskeys here. My dad runs an annual tasting at our synagogue in the fall for Sukkot that I often get roped into helping him with, and a few years back I suggested that rather than always doing scotches or big name brands, it would b fun to highlight local distilleries. This is year 4 of that, and between DC and the counties on the DC border, we've found some pretty solid stuff, especially if you like ryes. Also found one that had a really solid barrel aged gin that was good for cocktails (sadly, they recently shut down, I believe).
The vanilla note is nice on the Sagamore double oak, their 9 year just came out. Just grabbed it today and they added it to the sample on their tour. Sagemore gets their oak from Maryland, has it yard aged then sent for cooperage and toasting.
Have an experiment for you. If you do some research you will find that chestnuts have a similar amount of starch as corn. So what if you made the George Washington rye whiskey recipe but instead of the corn you made it with chestnuts. Test it out with a chestnut flavor stick and if it's working. You could then even age it in a chestnut barrel. Theoretically you could really create a pretty sustainable whiskey since chestnut groves could produce nuts for the whiskey and wood for barrel staves. Just an idea hope you try it out
Interesting topic. Benromach got a nice example to compare. One Expression with Air dried oak - one with kiln dried oak. In Europe they should be easy to get.
Clicked because I wanted to find out how pencils have been tricking me all these years. EDIT: they changed the thumbnail, and now this comment makes no sense.
youtube lets you upload 3 different thumbnail options. it presents the 3 thumbnails to different people until one is identified as the best performer, then it automatically starts presenting that thumbnail to everyone.
Benromach has their Contrast Series, same age distillate just one set air dried oak the other kiln dried. Super fun A-B comparison, both the nose and palate are different.
Has there been oak that was kiln dried for a little bit then yard dried the rest of the way or vice versa? Or barrels with staves that had kiln and yard dried oak (for possible funky flavors)? I’m definitely curious and intrigued by the process now
If you do go to Maryland please please visit Baltimore Spirits company as well. I’ve nothing to do with them . . . but they are making some amazing whiskey. Their ryes are some of my favorites! I should also mention that Dad’s hat in Philadelphia is only about 2 hours from Baltimore (not that I’ve made the trip . . . but I want to).
Random question ... I was just considering the dry weeks, and how the week can have a sort of 'cleaning' quality to the taste buds - notes that might not usually be picked up are more prominent. How many notes get muddied in the nosing of a batch due to over-sniffing? Is there a similar need to give the nose and olfactory senses a rest for more accurate detection of scents?
Always wondered where this astringent taste in very low budget bourbon was coming from. Stuff like jim beam has this sort of resin note. Like walking through a forest with the smell of resin in the air. Always thought it was just a bad spirit.
On the topic of barrels, what kind of regulations are there regarding whiskey barrels? Could you make one using multiple types of wood, and if so, what kind of effect would it have on the whiskey?
@@clydekimsey7503You missed some things. One of these days we're gonna wake up to the news that a horrible horrible accident has happened to everyone except Briana........and we'll all understand why she did it.

Best whiskey for a nap is tequila lol it always puts me down for the count.
If a Helix mattress costs more than $50 to manufacture I will be shocked. Who would pay $2k for that?
@Chris_Garman my daddy!
Please send Brianna on a trip to Scotland.
She would make amazing content, you'd be stocked for a year of shortform content. Make it happen!
If you think Americans are gunhappy, when I went to Scotland they were shooting clay pigeons on public beaches 😂
The Maryland troll was top tier. 😂
The scotland bit was just cold 💀

I believe that Jack Daniels Sinatra Select also uses wave staves, at least according to the description on the side of the bottle.

What if you soaked the wood in new make or aged whiskey, let it dry, then charred it? Would it make a difference?
Are they yard aging the staves ,and then sending them to the cooperage for assembly?
gotta shout out the crew. love yall and what you do
They never warn you how heavy those mattress in a box things are. You get a queen or king bed and it'll be *surprisingly* heavy for the size.
Love y’all. Miss Daniel.
It took me too long to realize that the ceiling hadn't been painted to look like the sky.
How do cooperages keep the aging wood from being filled with bugs/termites?

Hello one question
Is there a differens between yard age in differend climates.
Sorry for my spelling
Best regards from Denmark
Thomas
Yes
That yard aging age side-by-side comparison was really interesting.
🥃 I noticed you’ve stopped drinking with Daniel.. What gives?
I enjoy learning about whiskey here in your channel!
Daniel is also head of a non profit and can't be associated with a for profit company. Not from the US so I don't understand at all.
Baby Weller? Never even heard of that. I'd love to be able to find some 107 piled up like that SR.
Every prop barrel in distillery visitor centres have their lower hoops fallen down & gathered at the bottom 😁
why not just varied woodchips?
That hangman prank was just mean. I loved it! lol

"27 CFR § 5.143 - Whisky" has a table, which somehow doesn't clear it up...
It is the Fungus that Binds us!!!💪💚😎👊🧐
Enjoy Slotland. Which I'm guessing is Vegas.
Fresh oak has a cheese smell. After a two years it should be good. That’s what I like to use for smoking meats.
Interesting video for sure. thanks gang...
but I vote for B to go to Scotland.... fully paid for by R............................ she deserves it.
Tell me about the canoe
Thought you weren’t supposed to have other distilleries stuff at your distillery, or is that just where stuff is served?
i've never been to scotland, but i hope brianna gets to go before I do
0:17 I SWEAR TO GOD. I said this the other day! Old-Oak is like New Wood Pulp Sponge.
C'mon Rex, you mean to tell me you've never been to Slo+land?
Isn't that in Nevada? lol
Ardbeg grooves? Is that a wave stave?
Regarding "Slotland," Rex would be the person to set up a business trip to Slotland, aka Vegas, but Briana gets a trip to Reno instead.
seasoned wood is now obscure knowledge? Oh dear...
Edrington are the masters of yard aging. Why one pays more for Macallan
So, got a quick question: what even is white whiskey and how is it different from normal whiskey?
White whiskey is basically an un aged whiskey. It’s basically what most people would call “moonshine”.
Essentially it's juice that has been ran across oak so that it can legally be called whiskey and then bottled.
At least that's my understanding.
I haven't seen Daniel on this channel in a while 😮
@@clydekimsey7503 I believe he stopped working on the whiskey tribe and started his own journey

Yall ever thought Bout have Brewzle come on for a visit? Sounds like a cool collab tbh. Though he is strictly a bourbon guy for the most part
Isn’t this why Michters is so good.

How is wood still living when it’s cut down?
Ask the trees that can be cut into fence posts and grow back into trees.

Bomberger's Declaration
Anybody ever do a hybrid oak aging? like 1.5 years yard aged, then kiln age them
Hey MBs!
What happened to Daniel? I haven't visited this channel in 2 years
Practice yourself, for heavens sake in little things, and then proceed to greater.
No jury would convict her.
barely 1 minute into the video and Brianna has already taken us completely off the rails. As it should be.
Kiln for 2 days, yard for 3 months, rinse (but don't actually rinse) and repeat for 9-12 months? 🤔🤷
He's got sweaty hands from not doing anything, he needs to the doctor and get checked out.
Where are the videos once every two weeks? What the heck?
Bri yelling, "What the hell?!" sounded like an ex when she caught me with her half sister.

Wait, so is this why scotch whiskys are better than Bourbons which are way too sweet and oak heavy?? 🤭
I don't think Scotch is better then Bourbon. I think Bourbon is equally as good and some are better. It's all a matter of personal taste.
