    I make bottle staves from ex-Bourbon barrel stave Oak, and long-term yard/ air dried Maple and Hickory... The difference between them and the generic ones you buy off Amazon etc. is crazy. I can bottle-finish a $20-25 bottle of JW Dant or OGD114 into something that tastes like (and sometimes better than) a $90+ Penelope/ Elements/ 2XO etc. in less than two months! When I'm done cutting them to fit to a bottle mouth, you can see the grains of wood sugars with your naked eye, and some of them look 'peppered' from the tiny sugar dots bursting from heat at the end of the toasting cycle. Good info on the importance of the initial stave-aging here!!!

    Maryland resident here. We got some interesting whiskeys here. My dad runs an annual tasting at our synagogue in the fall for Sukkot that I often get roped into helping him with, and a few years back I suggested that rather than always doing scotches or big name brands, it would b fun to highlight local distilleries. This is year 4 of that, and between DC and the counties on the DC border, we've found some pretty solid stuff, especially if you like ryes. Also found one that had a really solid barrel aged gin that was good for cocktails (sadly, they recently shut down, I believe).

    The vanilla note is nice on the Sagamore double oak, their 9 year just came out. Just grabbed it today and they added it to the sample on their tour. Sagemore gets their oak from Maryland, has it yard aged then sent for cooperage and toasting.

    I believe that Jack Daniels Sinatra Select also uses wave staves, at least according to the description on the side of the bottle.

    Have an experiment for you. If you do some research you will find that chestnuts have a similar amount of starch as corn. So what if you made the George Washington rye whiskey recipe but instead of the corn you made it with chestnuts. Test it out with a chestnut flavor stick and if it's working. You could then even age it in a chestnut barrel.
    Theoretically you could really create a pretty sustainable whiskey since chestnut groves could produce nuts for the whiskey and wood for barrel staves.
    Just an idea hope you try it out

    Interesting topic. Benromach got a nice example to compare. One Expression with Air dried oak - one with kiln dried oak. In Europe they should be easy to get.

      youtube lets you upload 3 different thumbnail options. it presents the 3 thumbnails to different people until one is identified as the best performer, then it automatically starts presenting that thumbnail to everyone.

    Benromach has their Contrast Series, same age distillate just one set air dried oak the other kiln dried. Super fun A-B comparison, both the nose and palate are different.

    Has there been oak that was kiln dried for a little bit then yard dried the rest of the way or vice versa? Or barrels with staves that had kiln and yard dried oak (for possible funky flavors)?
    I’m definitely curious and intrigued by the process now

    If you do go to Maryland please please visit Baltimore Spirits company as well.
    I’ve nothing to do with them . . . but they are making some amazing whiskey. Their ryes are some of my favorites!
    I should also mention that Dad’s hat in Philadelphia is only about 2 hours from Baltimore (not that I’ve made the trip . . . but I want to).

    What if you soaked the wood in new make or aged whiskey, let it dry, then charred it? Would it make a difference?

    They never warn you how heavy those mattress in a box things are. You get a queen or king bed and it'll be *surprisingly* heavy for the size.

    Random question ... I was just considering the dry weeks, and how the week can have a sort of 'cleaning' quality to the taste buds - notes that might not usually be picked up are more prominent. How many notes get muddied in the nosing of a batch due to over-sniffing? Is there a similar need to give the nose and olfactory senses a rest for more accurate detection of scents?

    Always wondered where this astringent taste in very low budget bourbon was coming from. Stuff like jim beam has this sort of resin note. Like walking through a forest with the smell of resin in the air.
    Always thought it was just a bad spirit.

    Fresh oak has a cheese smell. After a two years it should be good. That’s what I like to use for smoking meats.

      White whiskey is basically an un aged whiskey. It’s basically what most people would call “moonshine”.

      Essentially it's juice that has been ran across oak so that it can legally be called whiskey and then bottled.
      At least that's my understanding.

      Cells take a while to die, even after the organism they're in is dead. It's just quicker in animals. In plants you can grow a new plant from a cutting of an old one, if you get a growth point in the cutting.

      I don't think Scotch is better then Bourbon. I think Bourbon is equally as good and some are better. It's all a matter of personal taste.
