Try Tomasu soy sauce. It’s the best I ever had and is aged in old whisky barrels!! From their site: ‘Tomasu soy sauce is fermented and aged, for a minimum of 24 months, in 25- to 50-year-old whisky barrels specially sourced from Scotland’s finest distilleries. Using these barrels as an aging vessel the taste is rather rich and one-of-a-kind.’
some baijiu is said to have the aroma of soy sauce. highly recommend you guys try out either Beijing brand or Red Star brand ErGuoTou baijiu (for budget) and Moutai for higher-end. Kinmen Kaoliang is good too.
As much as I hate sake, I feel like there would've been some potential in a cocktail with that. Either sake or mirin. Maybe something like a bloody mary, maybe some wasabi instead of horseradish, although part of me says that kind of feels like cheating. Also, I feel like after soy sauce, the next logical step-up from that is Worcestershire sauce, as long as we're rummaging through the pantry; maybe open some windows first, because there is fish in it.
Could've been interesting to use that second cut in a bloody mary, or even doing like a split base cocktail with a super peaty scotch like an ardbeg or octamore since they already have those funky cheese notes.

Most soy sauce is around 5% ABV... Not sure about the specific ABV of Kikkoman. No surprise to get cheese and tomato notes in this... glutemate, which is a chemical component of MSG, is naturally present in tomatoes, seaweed, some cheeses, some mushrooms, and of course soy sauce.
Tamari Sauce is a higher quality fermented Soy sauce. Seems Japanese Like the salty taste in Soy Sauce so ADD Wheat to the mix. If you buy Wheat free Soy ( like San J) or Tamara Sauce you will get much more complex flavors and less Salty.

As someone who lived exclusively in Asia for my whole life, I think I know the difference between pure fermented soy and soy sauce with and without a label telling me, those two things are like night and day you can't mistake the two.
