Woe Linn, that Pho looks fantastic. The Ox Tail brought back memories to when I was a wee lad in the 60's and my mom used to make ox tail soup, nothing like Pho but still delicious. My mom passed away way too early and I never got or figured out her recipe, I honestly can't remember having it since. Thanks for reminding me and bringing back a nice memory. I can remember how dramatic the impact of just a few minutes of Panama rain. I lived in Base housing at Howard AFB in 1968-9. When it rained, the little trickle of water in the drainage ditch went to a large raging torrent of red muddy water in less than 10 minutes. If you get caught up in that, you’re fish food.
What a delicious meal and served with pie as well. Thanks. We use to oil the screens with a light coat of mineral oil. The air would still get through, not the noseeums. The screens will need to be cleaned regularly, they get stuck on them.
Lol, it's a double edge sword with the rain. We love it as it fills our tanks, keeps basik nice and clean and cools the temps just enough to feel not so hot, but it prevents the sun from coming out to top off our battery banks and creates the perfect environment for those pesky bugs to come out. That is life for ya, you gotta take the good with bad. 😊

Hi guys. It’s Jean from Peñasco. To keep the noseums mosquitoes out of your boat spray the screens with raid. When the mosquitoes come to the screen, they won’t land on it or go through it because of the raid.
Try this for the no see ums. Rub fabric softener sheets on the fine mesh screens. I’ve heard the bugs won’t go through them then. Hope it works for you! The pho looked delicious!!
We have tried that along with a dozen other remedies. Unfortunately, the only thing that slightly works is chemicals. We had bug zappers going 24/7, smudge pot insect coils burning 24/7, and repellant spays/oils/lotions. We were applying them every few hours, but the sweat would just rinse it off and then they get you.

The veggie panga used to come to the east lemons anchorage first stop, has a chest freezer on board with meat to and beer to, hope they still do, we found in San blas that a wind generator was very helpful at night when the wind blow on those cloudy days, not unusual for stretches of time in San blas. Miss those great times

Lol, I am self taught. I try to replicate some of my favorite dishes from my mom and I'm always inspired to create something delicious for family & friends to enjoy.
Good times and memories at our island. They call it BBQ island now. One of a few islands that has grass. So that rain is called chocosana. White rain. We were in a tent though. We would run from Cocosolo(No longer exists)to San Blas. 72 nm run. Nice to see the old island again. I make oxtail too! Caribbean style though. 😊. Stay as far from mangroves as you can when anchoring. Keeps the sandflies off of you. Indians will tell you this. They told us.
Best Pho I've ever had was in Vietnam, but I find a lot of restaurants here in the states (noodle houses) use way to much five spice, it gives the broth a overly sweet cinnamon taste, which I feel is more of a short cut to enhance the flavor for low grade broth. 💙💙💙
We collected rainwater yesterday and it was 5ppm. We do run it through a Brita filter just incase there are bird droppings from our shades. The funny thing is that it picks up about 10ppm from the charcoal filter...go figure.

I have been wanting a sailing show that shows more food prep and figuring out how to eat around the world. The other sailing shows have been missing that some. I used to use Avon's Skin So Soft, which has a rep as a good bug repellant. Also you can try spraying your screens with mint oil as a repellent.

Take the screens off spray with off or bug spray and put back in place. I spray mine once a month
