I did this [before I watched your video] - my guests were absolutely stunned. However I used just gelatin sheets - no strawberry jello - why using artificial flavors and all, if you have the whole strawberry and - well alcohol. Besides of the gelatin I used just Cointreau, fresh lime and off course tequila. Then off course I put also some Maldon sea salt on top. I used a bit too less gelatin - but I think it got even better because of that, at it was not super jellied but still slightly liquid.
how long would these last in the fridge? this looks like a great idea for my summer wedding, if i made these the night before would they still be "fresh"?
what other flavor jello would you suggest? I was thinking raspberry, maybe lemon but I'm not sure what else would compliment the strawberry and not over power it.

Some may evaporate off but adding in cold or tepid alcohol lowers the temp so quickly that it's not even noticeable.
