For something coconut-ty, maybe try a mix with rum and coconut water? It would probably be yummy if you did 2 packets knox gelatin, 1 cup sugar, 2 cups unsweetened coconut water, and 1 cup rum. I would top them with shredded coconut too, but that might be excessive. 1 packet of knox can make up to 2 1/2 cups of liquid into jello, so don't worry if this recipe seems lacking in that regard.
No, no no, that's not how you do it. You boil off most of the alcohol and fizz. You make a strong water + gelatine mixture first. Let it cool until slightly warmer than room temperature, before it starts setting, add your alcohol + fizzy drink + any additional flavouring/fruits etc. The shots will turn out fizzy and alcoholic.
I like that you use unflavored gelatin so you can create unlimited and unique flavors not found in commercial gelatin. Thank you so much.
