  • We’ve been having a fair bit of ramen recently. Ramen which translates to ‘pulled noodles’ with it’s noodles soaked in a broth served with a medley of vegetables and meat, fish or even more vegetables is a super comforting dish that my daughters and I have had a fair few times at Wagamama, just one of many places in the UK that serve them.

      It's not a ramen tho it's Udon. Ramen a type of noodle which is not the one you used in the dish.

      @@CricketEngland Totally agree, Barry had access to one England's top noodle experts and didn't utilise him. If I'm not mistaken his top pick was the black garlic flavour.

    Hmmm. Cooking the noodles in the egg water probably not such a good idea unless you have washed the eggs before you cooked them. Eggs often have chicken poop and other pathogens on the outside. You have just added that to your noodles. 🤢

    Ramen refers to the name of the noodles used. So you technically made a bowl of ‘udon’!

    This is random but wanted to mention that the shortages in shops is also mainly due to staff shortages across the whole supply chain from factories, lorry drivers and shop workers. Just saying this as I work in a supermarket and lots of people think its panick buying at the moment when there's lots more going on behind the scenes (lots of it's down to self isolation I think). Sorry for the random rant

      I'm in West Scotland and it's the same here. A mixture of no lorry drivers,everyone being "pinged" and Brexit. Already seeing the affects of it.

      Where I am in the UK it's a mixture of it all, self isolation, panic buying, shortage of people in factories, lorry drivers, shop workers and also those that are still isolating from the first lockdown due to being vulnerable

      That was mention on the news ,the cause is the app that is pinging loads of people telling them to isolate.Causes a lack of delivery drivers.I went a did a main shop 2 weeks ago and many large gaps on shelves throughout the store.

    Most ramen (and typically any japanese cooking) gets their unique flavor from mirin,sake, and dashi

    If you want to try a more authentic ramen, head to a Japanese restaurant.
    The most common type is tonkotsu which is a pork bone broth.
    A ramen egg is also cooked in soy sauce and they are amazing. The yolk is also soft and runny.

      Also that isn’t really udon, it should be round and fairly thick wheat noodle which comes in a packet fresh, then it should only take a few minutes to cook it and the sensation of udon shall be chewy

    Ramen should have a six minute egg, not hard boiled. The yolk should still be runny, or at least gelatinous.

      I got their noodle book and it never quite tastes the same, it would be interesting to see if the books recipes are different to the restaurant- or if it’s chef skill

    Ramen noodles are different to udon. Udon are thicker and even the recipe is different. You made udon noodle soup.... NOT RAMEN.

    I would love to see some Bao Buns made with different fillings (as someone who is allergic to pork, I cannot eat the standard Bao Bun 😢 ) I have had a desert style type, made with lotus paste - very delicious!!

    Looks lovely that. Great stuff. I’d cook the noodles last so after the cold wash they can go straight in the broth. Sliced bamboo and mushrooms also are a good topping. Cut the nori into slices and add them into the edge of the bowl sticking out like wafers in ice cream. Also, soft boiled egg >>> hard boiled egg.

      I prefer poaching 2 eggs in the broth, myself. Then I stir them through to enrich it.

      @@tipi5586 They are a zero-calorie way to bump up the umami of any dish. You don't like the texture, fine. Just dice them, dry them, and grind them into a powder. Every bit a potent as anchovy paste, but without the fishy smell.

    Remember back in the day when Jamie Oliver went into schools, he'd ask the students to try and identify basic fruit and veg and most of them struggled to name things like celery and avocado. I bet Barry's daughters would get full marks on that these days - would make a decent video too!

    Supermarket shortages are nothing to do now with panic buying but now seem to be mostly cause by Brexit. Supermarkets and suppliers are struggling to recruit drivers- Tesco are now even offering a £1000 signing on fee to attract potential drivers. That and the lack of a trade deal with Europe means that UK retailers can no longer fill their shelves.

    Best way to time a hard boiled egg - put in cold water, bring to boil, as soon as boiling set a timer for 7 minutes, then cool - the time it takes to come to the boil can vary massively

    Looks awesome, the next step would be a an aromatic oil Barry (often called tare) - some of the oil from a roast chicken steeped with aromatics like ginger, spring onions etc would work well

    Never had ramen but I can’t see how I’d like it. Boiled egg is my least favourite kind of egg, hate the texture. Don’t eat vegetables as upsets my stomach. So yeah …..

      There’s pork bone broth ramen 🍜 called Tonkotsu Ramen (not to be confused with tonkatsu which is battered deep fried pork cutlet)
      Edit: the egg is best to be marinated in soy sauce with the egg yolk being slightly runny
      Then there’s miso ramen, kaisen ramen, shoyu ramen, shio ramen etc

      Nor have I, but I have seen bottled stock, with a resealable lid, great for singles or recipes that don’t need a large amount of stock.

    Egg mayo sandwich is delicious however in the Americas we call it Egg Salad. That might make it more appetizing for you.. Actually that could make a good video idea. Challenge yourself to make a gourmet Egg Salad Sandwich.

    Sounds like Norwegian weather, minus the snow in the winter.... Love walking up to 1 meter of snow on my lawn... or not... Been up and down 25-30 a while now and then the lovely rain came, we all love it, the trees, the firestation... but now it's too warm again buuuu!

    I have never tried rahmen but every time I have seen it the egg yolks look like they’re really soft, which is the reason why I haven’t bothered with trying it. Now that you have shown me that the egg can be cooked through I think I will try it out, especially since you have made it look so easy and delicious to do.

    Mate, one of these days you've got to try a ramen broth using chicken stock, beer, and sambal. The key is enough boiling time to get a good bit of the alcohol out. Me, I boil grilled, sliced bratwurst and sautéed mushrooms in the broth for a few minutes, then add in some sliced carrots and boil for a few more, then green onions and the noodles and boil for exactly one minute, kill the heat, crack in two fresh eggs, cover them with noodles, and cover the pot for 2 minutes, then stir the eggs through.
    It's really quite nice.

    To make an authentic ramen broth, you need to boil meet bones and vegies for 24 to 48 hours with simple veg according to the style of meat broth you want to create, strain, then add your noodles raw to your hot liquid with raw green onion and karage or fatty boiled charsu. To make a ramen egg you need five sauce, soy sauce, green onion ginger, brown sugar in a boil. Make a soft boiled egg, carfully peel and add it to the saoy mix and civer and refrigerate over night or till desired. I suggest making and curing the egg in advace as the authentic way yo cook ramen is the raw noodels cook in the hot broth.
    Plate up ramen, add broth, chop egg in half and add your bowl with meat amd green onions or lime and seafood, depending on your chosen style

    I agree with the egg-mayo sandwiches. Mash up an egg, a splash of vinegar & thats it. Why add the mayo? You're just putting seasoned egg onto egg, really. Just season the egg!

    hard boiled eggs in ramen - very nice
    ...but you should try spiced up ramen eggs in ramen - that's far better then "very nice"
    (and believe me, these eggs will be eaten by your girl!)

    The Roman that I eat comes is a solid brick and there's a little package of flavoring in it that you throw the whole thing in the microwave and nuke probably not the same thing I'm quite sure. Oh and at one point there was this bad going around where you just ate the noodles because they would fill you up and it would help keep you on a diet don't do that don't don't ever do that don't don't do it bad bad idea yes I tried it I had to try it cuz I'm like going what do you mean oh yeah that's nasty don't do it and what was in the Roman cuz Chloe was bouncing did did we leave out a step,,😉

    Barry, Sesame oil is not really meant for cooking, It has a very low smoke point so is traditionally used as a finishing flavour or in dips/ Marinades etc.. 😊

    Obviously not a traditional ramen. But as long as it's tasty and makes good use of available ingredients. I don't mind haha Barry is a way better home cook that I am anyway :)

    As a side note if you cant be bothered to find all the ingredients, wagama do make your own kits from home
    Also, japan centre have amazing ramen broths if you wanna be lazy.

    I went to Wagamama once or twice when I lived in the UK and it’s so overpriced and inauthentic. I never understood why the Brits love it so much.

    Wagamamas have released a couple of cookbooks. Hopefully you can get your hands on one of them and can make more of their recipes.

    We make ramen like this all the time, though the egg yolks are usually between runny and hard and sometimes we make soy chicken where we lightly pan fry the chicken in soy sauce which is delicious

    This was the most British ramen I've seen, doubt they put spinach or sweet corn in Chinese, Japanese or Korean ramen
