I made this today. I do NOT say this too often!: Thank you so much for a wonderful recipe. Tonight my family of 7 all enjoyed this meal so much from my finicky little girl to my elderly European mother. The tempura batter was light and tasty so the shrimp flavor was not masked. (I used baking powder not soda). The sweet and sour sauce was a perfect balance (I used tomato sauce not ketchup) I stir fried various color bell peppers and an onion. I served with white rice. I wish I could attach a photo. I can't wait to try more your recipes.
I like how he cooks, no fuss and no fancy ingredients (Well except the cooking wine he uses). Everything is measured by eye, and done fast. I thought this dish would be a challenge, but after watching the video I was surprised how easy it was to cook. I emulate how he cooks; I setup a portable burner on my electric range and have my flat bottom wok. I have done several of the recipes he has shared, and now my family tells me I could open up my own restaurant! Thank you to Sue and Gambo. **May 1, 2020. Miss my youth days 1974 at the only Cantonese restaurant in Nashville,tn. Learned how to prep and cook all...even washed dishes , peeled shrimps, made duck sauce...seeing you in your kitchen brings back those memories...your dishes like how I was taught...Canadian American cooking Chinese..my son loves it...
I have tried so many Chinese recipes and I can never get them to come out right! I tried your beef lo mein today and it came out wonderful!!!! I am making this sweet and sour shrimp for dinner tonight to surprise my husband! Thank you for your wonderfully easy to follow recipes!!! I already had everything in my pantry and freezer to make these dishes! I’ll let you know how this dish comes out! Oh by the way… my husband is a retired Italian chef and restaurant owner! He is from Brooklyn, NY. We miss the Chinese food from NY. We live in Florida now and cannot get REAL god Chinese!! Thanks again and I’ll let you know! 😁

👄I eat KETO, so I substitute arrowroot for the flour and cornstarch and monkfruit for the sugar, otherwise all is the same!! Delicious!!! Chinese food/recipes are my "go-to!"

In the velveting step you use oil and no egg white for a binder. Why is this since oil is not a binder. It would be helpful if every once in a while you explain why you do the things you do. Great videos, I will keep watching.
You can use a cast iron skillet. I used to think the same that I needed a fryer to make this type of recipe. But if I am cooking for my family and using a small amount of shrimp the skillet works.

Is this baking soda or baking powder? My confusion is the brand. Where I am they only have the baking powder in that brand. would that work?
He said,"Soda" but it was powder. A mistake. That's why he also shows the product to use. Being human, he may make a mistake.

no no, it will become soggy that way
If you know the entire serving will be consumed. Toss in the sauce. If no just leave the shrimp & sauce separate.
