5 g salt

Hi great recipe! I’ve used a few and when it comes to baking they sink.. any idea why? The proof and triple in size and my oven is nice and hot. Is it over proofing ?

Terrific! My oven can only go grill or vent. So I always use the second one, 180° 20 mins. Do you think make sense to leave water in the oven as steamer? Maybe I could take it out after 15' but I have to open the oven....what do you think of it?

Hi there, do we have to knead the dough until it reaches the membrane test or windowpane test? Cause my kneading machine is different, so just wanna make sure. Also, why my dough keeps shrinking while lamination progress. I always have a hard time with it :))

Thank you and love to hear it, as I am performing the hand lamination at home so I don’t recommend to to knead the dough to fully gluten development or pass the window test. To me, it has to be under that stage or around 70-80% gluten-development will be perfect 😊😊

In my opinion you're using wheat flour higher or lower of protein .. I guess slashes on cake has an slashes dough teqnique instead .. It is the same teqnique to makes cinnamon bun n babka bread .. Thanks

Can you make the dough/butter pastry in advance and just keep it in the fridge for when you want to use it?
Hopefully you have found an answer to this within a year but in case you haven’t lol, yes. You can perform all fold and keep dough I. Fridge for a couple days. Or freeze. The proofing will simply take longer from fridge.

I have made your recipe twice and the first time it was wonderful!!! But this last time, it came out dry and dense. Can you tell me why that may have happened?
Thank you Krissy for testing my cruffins. There are many factors that can affect the finish product. When it comes working with the pastry, please make the right lamination as it needs time to practice and experience by yourself, also monitor the temperature is very important.
