    Chi ha un minimo di dimestichezza con questo settore così affascinante avrebbe capito che sei una professionista solo dal piccolo dettaglio nel quale hai usato la panna al posto del latte nel mix per spennellare.
    Ma andando al sodo, semplicemente spettacolare la lavorazione della sfoglia, l'unica cosa che io valuterei in una mia ricetta personale è di usare cioccolato fondente spezzettato a mano di mia scelta e non le classiche gocce, ma è una monomania personale.

      Diciamo che il cioccolato tritato in forno si comporta diversamente rispetto alle gocce di cioccolato ( ce ne sono comunque di ottime, basta non prendere proprio prodotti scadenti) e si ottiene un risultato davvero delizioso!
      Ho ricevuto tantissimi feedback positivi con foto di risultati davvero magnifici, se li rifarai anche tu spero di ricevere anche il tuo !! ☺

      @@denisecastagno guarda non sono un pasticcere, ma ritengo di avere abbastanza conoscenza su questo mondo per percepire l'arte di chi lavora in un certo modo in pochi attimi e guardando spesso e volentieri gli artigiani d'elite ho maturato dei miei concetti estetici, sinceramente mi piacerebbe anche sperimentare un giorno qualcosa in modo serio e applicato, ma per vari motivi non è una cosa in programma a breve.
      Cambiando discorso, io è già da un pò che sono letteralmente rapito dalla maestria di Amaury Guichon, mi sono guardato e riguardato tutti i suoi video e magari nella mia ignoranza mi sento di ritenerlo addirittura un pò sopra al livello di Grolet, quanto meno nella precisione assoluta di lavorazione, che a tratti davvero sembra di un altro mondo, non so tu cosa ne pensi a riguardo.
      Entrando nel merito ti linko una sua opera per la quale volevo chiederti che materiale secondo te ha utilizzato per realizzare la campana trasparente, ti ringrazio.

      she used one mould for cooling the custard and the put the cooled custard in a bowl to mix it with the chocolate chips

    Is that 400g of total flour? I used 200g of 00 flour and 200g of All Purpose flour and it was really dry. I had to add more than 187g of milk to get it to form a ball.

    Ciao, questo canale è da paura! Usi le mie stesse dosi per la pasticcera ma sto provando ad abbassare lo zucchero perchè la sento troppo dolce per me. Ho messo 60 zucchero e 60 tuorli, 20 maizena. Un paio di domande se possibile: se metto un latte di soia 8%, devo aumentare la quantità? Lo chiedo perchè mi pare che mi evapori molto e mi resta meno crema..Inoltre, è meglio mettere la vaniglia nei tuorli anzichè nel latte riscaldato?

      I don't know why, there was probably a problem with the rolling of the butter.

      @@mertar1579 melted during lamination? Damn. You should take the temp of your butter. Also, like it is mentioned in the video, the consistency of the dough and the butter need to be similar.
      When laminating by hand, it can be difficult, but you need to get it done with a bit of speed and authority. It must be warm where you are?
