INGREDIENTS “Sauce” • 1 tbsp sugar • 1 tbsp soy sauce • 1 tbsp Michiu cooking wine (or gin, white wine) • 1 tbsp mirin (or white wine, sherry) • 1 tbsp toast sesame “Fish” • 200g firm Tofu • 40g cooked sweet potato • ½ tsp salt • 1 tsp sugar • 1 tsp dark soy sauce • 2 tsp cornstarch • 1 tbsp soy sauce • 1 sushi nori • 2 tbsp oil DIRECTIONS “Kabayaki Sauce” • Cook to Syrup = To a small pot, add sugar, soy sauce, cooking wine, and mirin. Cook over low heat until a thick syrup. Brush sauce on “fish”. “Fish” • Tofu = Put tofu in a clean towel. Squeeze all water out of tofu. • Stand Mixer = Add tofu to a stand mixer bowl, along with sweet potato, salt, dark soy sauce, and corn starch. Attach paddle, turn on to #3 and mix to thoroughly combine. • Nori = Cut longwise into 3 equal strips, because this is going to be the “fish” shape and structure. • Load Nori = Place 1/3 of tofu mixture on each Nori. Smooth to evenly and perfectly coat. It will be ~1/2” thick. With butter knife, diagonally indent all the way up and down and across to give the look of fish filet. • Fry = To a 12” frying pan, add oil. Heat over medium-high heat until hot. Add “fish” filets nori side down. Lower heat to medium-lowish. Fry until golden brown ~5 minutes. Flip. Fry until golden brown ~5 minutes. • Plate = Cut in half lengthwise. Place over a bowl of steaming rice.

I've finally tried this recipe! I will add half the sugar next time and will use a non-stick pan. Even if I used oil, the nori sheets stuck to the pan. 🥲The taste was nice, though. Thanks!

I think this is a great note from you and maybe I will try it in the future. I might add a little more starch or sweet potato though, to make sure they bind better!
I think you can try to thicken it properly, up to double the thickness. This should still ensure that the seaweed has enough take up strength and the inside can be cooked easily while frying;-)
